One of my children was gifted a Hello Fresh box with three family meals. Already made the Shepard's Pie and will be doing a Parmesan Crusted Chicken tonight.
No food (read:thawed meat for DH) in the house, and we're recovering from a snowstorm, so I remembered a really good vegetarian chili recipe my DIL gave me. I had the veggies, and I also folded in parts of another vegetarian chili recipe I used to like, so I'm making vegetarian chili with beans and walnuts and beer as the liquid. Also basmati rice and sour cream.
We had rotisserie chicken that we ate for two meals and then cut up the leftover breast meat. Decided to make stuffing and mix in cream of mushroom soup, mushrooms and the chicken. It was very tasty. All in the microwave!
Tonight will be homemade pizza. I have a craving... lol.
Feeling uninspired with so much weather keeping us inside. So...chicken with brown/wild rice, pecans and mushrooms. DH adds dried cranberries to his portion.
sausage & spinach quiche with an almond flour crust (the crust is a new recipe). Should be pretty quick - other than the eggs the filling is frozen and ready to thaw and add - made double last time!
Tried a kale recipe that I didn't like. It was to be served over toast so I just ate the toast.
Steak tips and salad and pita bread and baba ghanoush (bg was store bought). Enjoyed it very much!

Baked teriyaki chicken with mixed roasted veggies (beets, carrots and cauliflower so far) and I'm thinking buckwheat kashi.
Freshly baked chocolate cake (by DH) and a nice cabernet. Not something to make a habit of, but very enjoyable! We were celebrating my sister's birthday.
Last night was a meatball casserole and tonight is homemade egg mcmuffins. Tomorrow is tacos and then we go out for dinner on Fridays and Saturdays.
Grocery had a $10 off $50 spent so I bought a $10 chicken. DH is smoking it today so we should be able to get three meals out of it including BBQ, tacos and pineapple rice.
We roasted a chicken the other night. Tomorrow we’ll use some of the leftover for chicken enchiladas and then I’ll freeze the rest for use in the next week or two. Tonight I’m making Indian cauliflower again.
Turkey franks with roasted cauliflower & zucchini. (Had to use the veggies and the hot dogs are easy - LOL)
On a homemade cream of vegetable soup binge. Last night was a small diced onion softened in butter, add 1 1/2 C veggies (carrots and broccoli stems), add 2C chicken broth, a bay leaf, salt and pepper, dash of thyme and let simmer. Add 1/4C skim milk powder, blend and eat.
Tonight's veggies will be cauliflower and broccoli.
Another day will be frozen asparagus.
Made homemade chicken vegetable soup today. Tasted great!
Shrimp and scallop pesto with linguine and a salad. We used to eat garlic bread with this meal but not anymore. There's more than enough carbs in the pasta.
Fried chicken from Giant Eagle! Enough for 2 dinners $7.99. It's the best!

As I said earlier, a child was gifted with a Hello Fresh box and, subsequently, signed up for two more boxes before cancelling. Tonight we are having "White Cheddar Wonder Burgers". Bless this child who knows my likes and dislikes, mine will be a plain swiss burger. LOL.
Egg rolls, orange chicken and rice--tomorrow.
Oysters on the half shell and lobster rolls at home, ingredients from the local fish market. Also got crabmeat for crab cakes tonight. Dollars go a lot farther at the fish market than at a seafood restaurant!
Back to an easy, old favorite - baked brown rice and lentils. There are definitely going to be more beans and rice dishes in our future. lol.
Seattle dog: hot dog on toasted buttered hoagie roll with cream cheese and caramelized onions. Jalapenos optional. Sliced tomatoes in Trader Vic's Javanese dressing.
Last night I made chicken and dumplings as we were expecting company. They begged off, so I have leftovers. I'll add a salad.

The loud beepy thing on the wall that can smell when the food is done to just the right amount of crispness. Someone once told me that it’s also good at waking people up if the house catches fire overnight but since the house has never caught fire overnight I don’t know if that is really the case.

We're getting several inches of snow today, so I'm soaking some navy beans all day while I'm at work. I'll put them in the pressure cooker along with some leftover ham bits for ham & bean soup. While its cooking, I'll throw together some cornbread.
Split pea soup and home made bread. Cooking split pea warms the kitchen on a cold day and I can freeze some for later. The bread was a test recipe using some oatmeal and corn meal, plus flour. Probably not a repeat, but better than store bought.
I made a kale and farro salad. DH is making a lentil, onion, rice dish to go with it.
Yum. Right up my alley!
We're having leftover Chinese. DH had a bagpipe meeting off the island and there was a Chinese take-out right next door. We have no Chinese food up here, so he couldn't resist but went a little haywire, so we'll be eating the stuff all week.
Tonight is going to be chicken enchiladas with the leftover chicken from Tuesday. Hopefully I can avoid setting off the dinner alarm!
