Tonight, is our turkey night. Got my pie baked this morning and some of the sides prepared yesterday. Should be easy peasy to put everything together the hour before.

We only made a turkey breast for thanksgiving. Finished that in enchiladas yesterday. Today is chicken drumsticks with the last of the thanksgiving sides.
Turkey soup.
Okay----People waaaay up north, in the middle o' nowhere(IWAH) are celebrayteen the end of Harvest(includeen Deer)by eateen Lockered Deer Sausage. A course---the sausage is a hybrid of venison and factory-farmed pork fat. Plus, salt & garlic and stuff to preserve it. Yup. But yeah---here's a photo, Courtesy o' the local Custom processor. Okay---Several years ago, they had a massive sale on one brand o' canned baked beans. Nothing special. Nope. Not gourmet or anything. Well, I stocked up, and am getting around to finishing up my supply. The Best-by date was last spring, so they're fine. But yeah---canned baked beans. Yummy & awesome & amay-zeen. Yup. I do put some plain ordinary butter & sliced pickled peppers in 'em. Hope that helps you kids some. Thankk

We are both getting over Covid and everything tastes weird. Even coffee!! It is hard to put a lot of effort into cooking right now when taste and smell are so off.
Okay---I ate at Bob-O's Fine Foods. Ordered the Granola Raisin Bran Cereal, for brunch. Then, had the fettuccini al Bob-o, with canned 'sketti sauce, this evening. Yup.
Refried bean tostadas with guacamole and a Spanish rice side dish. Holiday cookies. The price increase of avocados seems to have exceeded the rate of inflation for some reason and they have almost become a luxury rather than a staple. The again, I don't recall ever even having avocados or seeing them in stores from my growing up 60's food memories, and my home town had a significant Hispanic population. It's possible I was culturally deprived.
SO made a deep dish pizza. Probably not the healthiest thing we could eat but it was delicious.
Pretty basic hear. Monthly grocery trip is coming up Monday. Meanwhile I am working through limited options. Today was smokies (relish ran out).
Tonight SO is making homemade spicy eggrolls and i’m making hot and sour soup.

I've been on a southwestern dish kick. Friend gifted me a small bag of chicos from his farmers market, which are dried and roasted corn kernels. I've boiled them with mayocoba beans and will serve with tortillas, sliced avocado and queso fresco and a side of rice.
Spinach salmon avocado salad and something else TBD.
I’ve been doing a lot of eggs for dinner. Easy and quick. Sauté veggies and maybe some cut up ham in skillet in butter, then I add 3 eggs beaten with a bit of milk.
Usually do mushrooms as they really bulk it out, but last night I added diced green pepper and ham. Ham steaks were really on sale last weekend so I got two. I will definitely keep this up. I get 4 meals out of 1 doz of eggs. I don’t feel like cooking much these days, but this keeps me from doing carry out on the way home.

I do love making soups, especially in the winter. I've turned DH on to them, too, so we have a homemade soup every day. So much nutritional bang for the buck.
Okay---Last night, after a hard day doing repair work on my backyard cottage and also removing the gas tank from my classic 1989 S-10 pickup, I enjoyed an evening meal of two bowls of Aldis' Crunchy Granola Bran Flakes. Yup. I predict that since it is such a delicious & reasonable-priced product, that the chain will stop carrying it, per past experience. Hope that helps you some.
I'm going to make Vegetarian Minestrone Soup tonight, which is a great way to use up all the bits and pieces in the fridge. I look up recipes online but rarely follow them to a "T" - I just use them for a take -off point and inspiration.

We had subs from Subway tonight. While I was there getting them, I saw a bunch of ambulances heading towards a very high bridge that connects my County to the neighboring one. Turns out a lady had jumped off. :(
I froze two batches of eggplant parmesan using garden eggplant and pulled a package out to thaw for dinner this morning. Close to the last one.
Tonight SO is making a pasta/spicy chicken sausage thing with zucchini that he's made a few times before. It's way more exciting than just pasta with red sauce. And I don't have to cook it!
Cuban black beans and coconut rice.
Homemade pizza. Already have the sourdough crust made. Just need to cook it up and put the toppings together.

Since I'm home alone tonight was pasta with leftover tomato soup as sauce, made more exciting with a few grilled veggies.

Made BWW Garlic Parmesan Chicken Pasta in the crockpot last night and have been feeling it since. Too much garlic in the sauce I guess. Serious acid reflux that even Tums can't conquer. But... it was so good, it is worth the pain. Next time, I will add more milk to cut the sauce thickness a little bit.
Okay---The deep-discount warehouse overstock and surplus expired damaged salvage store where I shop had these cases of cheetos mac-n-cheese that are microwaveable. They weren't dirt cheap at .66 per serving, but really serve their purpose. Yup. Also, they had twin baby ruth bars by the case @ .50 each. Those gas stations would charge upwards of $2, you know they would. But yeah---Mac-n-cheese & a candy bar. Yup. Thankk mee.

I had bought some super huge tortillas awhile ago for a recipe that turned out so-so. I tossed the rest in the freezer. I've decided to try to make them into baked chips this evening for nachos. We shall see.
Last night was a slow roasted chicken. Ginormous 6 lb bird. 290 degrees for just over 3 hours. Turned out so moist and juicy. Lots of leftovers. Tonight is chicken enchiladas. Tomorrow will be chicken pot pies. Not sure about the rest of the week beyond making stock from the carcass.
Vegan lasagna. An experiment using processed cashews instead of cheese. I think I did a cashew/cheese experiment once before and it was a failure. I discovered one of the last containers of tomato sauce from the summer garden, which will be a bonus. Spinach and mushrooms.
