Totally agree about breakfast being the best meal!!! (Depending on what the breakfast is, though. LOL)
Tonight is brown rice and lentil casserole. Already in the oven, as I have to go in to work early.
I sucker into a giant tub of baby spinach because it was on sale and I had to use it up. The experiment was tofu saag over rice, which turned out surprisingly good and was fairly easy. A bit of milk, butter and meat instead of tofu would probably bump up the flavor for those so inclined.
I had toaster waffles for breakfast speaking of which. That was a nice treat.
I cooked a turkey Saturday that I'd had in the deep freeze since Thanksgiving. The carcass is back in the freezer to be cooked down for broth at a later date. Tonight, I'm using the white meat to make turkey salad to eat in some pita pockets that we've had in the fridge for awhile. May open a can of soup since it's so cold here today.
Last night we had biscuits and gravy, eggs, and bacon. Tonight is nachos.
Rice, mixed veggies and ham.
Dinner is leftovers. There is a LOT of ham left and some soup from earlier in the week, etc. Plenty for folks to make several meals.
Red beans and rice.
Homemade pizza. Half turkey pepperoni, half red pepper and onion.
Brunswick stew.
Vegetable stir fry with noodles.
chicken enchiladas with homemade sauce. Filling will also have corn and spanish rice.
Ground beef crumbles with onion and sambal, peach tea.
Stuffed pork chops with baked potatoes.,
White bean and tuna salad. I can't get past the fish on Friday mindset.
Made a really good stir fry last night! Now at a loss for tonight. LOL
Last two nights has been cornucopia salad--it would be good in summer, but felt the need to make a salad, and this one makes a huge pyrex rectangle.
Fish tacos… cheated by using baked fish, cabbage/kale slaw, homemade lacto-fermented spicy veggies. It was surprisingly good and EASY too.
Homemade spinach paneer (maybe a little too much garlic) with leftover fresh asparagus and premade samosas.
One pot salmon with potatoes, broccoli, carrots, and garlic bread.
I made a cheese quiche last night. First time in years. It was delicious. Just frozen crust, eggs, half and half, nutmeg, salt and pepper. Great!! Ate the leftover for breakfast.
Made sweet-n-sour chicken, roasted cauliflower and stuffing.
I love to make chicken cabbage wraps with julienne carrots. It's a fantastic recipe for dinner. This is my husband's favorite dinner. We eat it at least twice a week.

Not sure... last night we had the Madras Lentils you can get in packets in Costco. It's a great base for dinners. Last night we had it with basmati rice, and DH doctored it up with mushrooms, diced tomatoes, cannellini beans, garlic, cumin and turmeric. It was delicious!! I'm hoping there's enough leftovers for both of us tonight.

Today was leftover chicken enchiladas. Had dinner at the local "southern chicken" restaurant last friday for the first time. It turns out they now have a smoker* so I got a smoked half chicken. It was fantastic but I didn't come close to eating all of it. The leftovers went into enchiladas and quesadillas for both of us earlier this week. One serving of enchilada is left for lunch tomorrow.
*I could have gotten a quarter turkey for the same $20 price. One of these days I may just get one to go. That would provide enough meat to eat for days and days and days.

Okay---yesterday it was Aldis crunchy-granola raisin bran w/choclit milk. Then fer supper, i made fettucini and topped it with aged tin-canned spagetti sauce. See---I picked up a case of 6, on sale, and it got shoved way back in the cupboard in the garage. Best By Date: 6-2018. Almost 5 years ago. But yeah---the stuff was fine, just a little flat-tasting. So what I did was season it up, with spagetti sauce mix, which helped greatly. I made the mistake of having a platye, kinda late, and ended up with indigestion. Then let the other 1/2 of the recipe sit up at room temp, overnight. Today at noon---it was really good. Hope that helps you kids some. Thankk Mee.
Made Valentine’s Day celebration lunch.. grilled fresh wild caught shrimp from the gulf and all the fixings. Easy and good.
Poke'. I was at the grocery store the other day wandering aimlessly waiting for the pharmacy to reopen after lunch when I found a package of frozen tuna cubes intended to make homemade poke' and I thought "that would be fun!" I've made a sriracha mayo sauce and a tamari and rice vinegar sauce with a little wasabi and will be mixing those with the tuna and some scallions, avocado, pickled radishes, crunchy onions and toasted sesame seeds and serving it on a bed of rice. Super easy since the only cooking will be a pot of rice. I hope it tastes as good as my favorite poke place near my office in Chicago!

We have some fresh mozarella cheese left over from chicken parm and pizza so tonight is stuffed shells. SO had to go to three stores to find them. Apparently our whole county must be going keto and avoiding carb-laden things like pasta...
Just saw a clickbait article of ‘14 recipes for fat Tuesday’ or some such. Since we all know that clickbait articles are incredibly important I decided I’d better roll with it. Tomorrow’s dinner is going to be jambalaya and air fried hush puppies.
