Full disclosure:
We subscribe to Hello Fresh and often Blue Apron. So we have whatever they send.
Even if I were single, I'd still get two-three meals a week as I really hate (and I'm not being hyperbolic) menu planning.
Grocery store sushi. It is pretty decent; they are on premises making it fresh every day.
DH had a successful 6-month follow up with his urologist. It had become our tradition that I would take him out to eat afterwards to celebrate, but we're doing things a little differently just now. We've not eaten in a restaurant since early March. On the plus side, sushi from Market Basket was under $20. and we would typically drop $100 - $150. at Legal C-Bar.
Twice baked stuff sweet potatoes - stuffed with mashed sweet potato, cheese, ground turkey, and diced broccoli.
Pulled spaghetti sauce out of the freezer.
Beet greens fried with garlic, onion, tomato sauce and Mexican blend cheese.
Pan seared summer squash. A neighbor gave me the main ingredient from his garden and I harvested herbs and mint from mine for the dressing.
Zucchini boats, round 2.
Not sure what will be for dinner tonight. It's VERY hot and I'm not sure I want to cook at all. Maybe I'll just make a big salad and tell everyone to raid the fridge on their own. LOL.
Meatloaf and baked potatoes.
I cut some squash blossoms from the vine that's crawled through our fence from the neighbor's. I'll stuff 'em with a little ham and mozzarella and saute them. Not sure what else; I'll have to see what has to leave the 'fridge before trash collection tomorrow. I'll make the blossoms tonight for dinner if DW gets back in time from visiting with her mother this afternoon. Otherwise, tomorrow for dinner.
That sounds nice, Steve.
A salad.
I have been thinking of eating my squash blossoms since they aren't producing any fruit anyways. My hunch is rabbits eat the tasty baby squashes as soon as they form. We have plenty of bees for pollination.
Lots of rabbits and chipmunks outside and ants inside. My neighbor told me try growing things in raised beds as the rabbits feel vulnerable on top of them so don't climb them readily.
Meat and cabbage pie.
Keto "cereal":
1/4 c chopped nuts
1/4 c cup dessicated coconut
1 handful berries
2/3 unsweetened vanilla almond milk
Baked potato with caesar salad.
Day #2 of Green Beans, Red Potatoes and Ham and I'll probably answer the same tomorrow, I sort of overdid it.
Beef hotdogs and potatoes. We are eating whatever is in our freezer.
Had the squash blossoms last night. Substituted a bit of salami since the ham had gone off. They were good! Looking forward to harvesting some more of those in coming days. (This over-the-fence gardening is the best....)
No. In fact, one can identify female blossoms from male blossoms because the females have a bulge at the base of the blossom that grows to become the squash. Since we don't want the squash, we take the blossoms. That also solves the problem of having to find homes for the squash on our side of the fence come next month. :~)
I did not know how to tell the female from male blossoms (or even that there were such things!) Thanks, Steve. Off to go look at my jarrahdales and see who's who.
We are also eating whatever was in my husband’s ex freezer. She went to hospice at a friend’s house and told us to take her food. We took some and donated the rest. So today there’s one pork chop and a huge steak big enough for 2. She also froze a lot of pasta dishes in individual containers. Great for a quick meal with no cooking. We are visiting every 2 weeks and is so much better since stopping chemo. Looks like she will be alive when my step son gets home in August which is awesome.
I Just want to say I think you are a wonderful person, Terry.
Thanks Tybee. Most of her friends have deserted her during the illness. The couple that took her in are 2 men that she worked for after retiring. They are so good to her. They are providing all care such as bathing. You can feel the love when you go to visit. They are wonderful people.
I have a can of salmon in the cabinet, so am going to make salmon patties with a dill sauce and some green beans.
Thanks, Steve. Definitely some good information and I appreciate it. I have blossoms on my little squash plant but definitely want the squash. LOL.
Last night was chicken in BBQ sauce over rice with green beans. Not sure about dinner tonight, maybe some homemade pizza.
Went to the farmer's market this morning and got fresh sweet corn and a mass of veggies. Spiralized many of them and roasted in oven. Had with seasoned wild Alaskan salmon. It was a meal worthy of a special occasion!!
Shrimp and grits this evening. Broccoli on the side.
An artichoke with tzadiki dip.
I have slacked off from my regular salad-eating behavior since DH left work. Our dining habits have shifted to where we're usually eating 2 meals per day, and he doesn't much like salad. Tonight he wasn't hungry so I made myself a salad and a refreshing "mocktail." I'm feeling very virtuous!
Tonight's dinner: made-from-scratch corned beef, cabbage, and squash blossoms sauteed with just a bit of Parmesan:

It was good to be us tonight. :)
Last night's pizza turned out well. Green pepper and spinach toppings were picked fresh - I'm loving this gardening stuff! LOL
Tonight, burgers wrapped in lettuce instead of buns and whatever other veggie I find.
Not feeling inspired lately. Maybe a mashup of a can of chili and hominy.
A salad with the atypical ingredient being kalamata olives.
Something salad-y.
I'm happy to hear chipmunks are taking up the slack in gardens everywhere!
