Salmon and a cauliflower casserole, with catfish nugget appetizer. Wasn't the plan, but Dsis called and said she'd just been gifted about 8 lbs of chicken breast and could she bring it up, as her freezer is full and she doesn't like white meat. (I don't either, but cut into tiny pieces and marinated in something, it's edible. And free.) Well, duh. ;-) She arrived with that, a large bag of onions, and several packages of salmon and catfish steaks. As the chicken was frozen but the fish was not, we decided to eat it. Pulled out some cauliflower we'd frozen along with a frozen pack of bacon/onion/garlic, stuffed them in the oven, added some yogurt and cheese, pan-fried the fish, and voila! nearly free dinner for 4! I am now soooo not hungry, lol.
