Last night I had a temper tantrum and told DH he WILL eat tomato based soups! Our freezer is jammed with tomatoes. He eats spaghetti sauce just fine. He eats chili. I told him to think of tomato-based soup as chili without beans
I cannot eat all of these tomatoes myself even though I like tomato soup a lot. I like tomato-based vegetable, tomato-based white bean and chicken, tomato-based etc. etc. soup—I like it all. We must eat at least ten packages of tomatoes in the next coupla months because I can’t see to the bottom of our freezer.
And speaking of chili, we went to a chili cook off last week where we voted on the best of a dozen pots of chili. There was one chili there that was simply outstanding. It had heat, but it also had a wonderful intriguing aftertaste.
It makes my own chili seem bland and uninteresting
Okay---I just do not believe in recreational or competitive eating.
Jambalaya… added fresh mushrooms and chicken… wonderful!
This afternoon I pitted cherries from the deep freezer. The cherries were labeled “2005” year. Then DH made a cherry dessert for tomorrow’s dinner.
Our friend had a bumper crop of Pairs this year so she gave us two sacks of them. DH is peel them and is now cooking them in a sugar bath.
Pretty much a traditional family Thanksgiving for us - turkey and numerous sides. My portion is roasted cauliflower, apple pie and a green salad. (still have to make the salad - lol) Best part, however, is being with family.
I’m going to my goddaughter’s maternal grandparents’ for dinner. I’ve known them for years. They always host. I’m taking Brie and crackers and a cherry pie I had to buy frozen as I couldn’t find any non frozen pies last weekend
Okay---Bread. But yeah---bread from Walmart, that is sprinkled with seasoning. Maybe later, I'll have sketti. Yup
We had Mom and Sis over for dinner. Sis and I went to Mom's house and got her up and ready and brought her to my house where DH was manning the kitchen. Sis is a vegetarian, Mom doesn't know what day it is and Rosa doesn't particularly love turkey, so we had a non-traditional Italian pasta dinner with a few desserts. Mom was decidedly non-perky and asked more than once if she was dead yet or why she couldn't just lie down on the floor and die.
I'm sure I will horrify some when I say my gratitude cup would have really overflowed if Mom had died during the dessert course. Oh well, can't have everything. Poor Mom does not deserve this hellish existence.
So sorry you are having to deal with this, rosa. It is wonderful to have Mom at another Thanksgiving table, but I totally understand that sometimes you wish the best for the other person, even if the "best" represents the pain of loss and grief for you. I saw that in my MIL in her last year... she just seemed to have run out of life.
And on the flip side, I got a text from my brother #2 early Thanksgiving morning that my brother #1 (whom we visited in August because he has been suffering from a myriad of health conditions, including multiple small strokes and congestive heart failure) is in the hospital. My SIL says that "multiple doctors are throwing darts at the wall" So, on Thanksgiving, I had my cell phone on the table beside me in case I got terrible news. I wish an angel could come down and wipe away all this crappy medical stuff and make him "hale and hearty" again. So in terms of thanks, I'm grateful for my relationship with my brother and for his goodness that he has shared with me, but I did pray this morning during meditation to God/Creator/Universe "Thy will be done."
Really resonate with both of these--at the end I was just praying that "they be okay" whatever okay meant, at peace, and that God keep them close and alleviate their suffering.
I'm so sorry that your brother is doing poorly, Catherine. That's good that you got to spend time with him during the summer.
I'm so sorry for all the trials and tribulations some folks are going through. Hugs to all.
Have the "free" turkey from the grocery store in the oven and several leftovers from Thanksgiving dinner in the fridge. Should be a good dinner and nice stock of the freezer by the end of the day!
Okay---what did I have, yesterday? Hmm. Oh, yeah--summa those ready-made burritos. Heat-n-serve. They cause me gastric disturbances, but I'm fine.
Chicos del horno stew. A traditional New Mexico dish made with dried and roasted sweet corn. A few supermarkets around here actually carry chicos.
Thankfully my thanksgiving didn't involve dealing with loved ones struggling to survive another day. I'm lucky that that has never been my reality. The struggle days have just been random days during the year. My heart reaches out to Rosa and Catherine and I hope that your loved ones are able to find peace.
Today's dinner was a lasagna using eggplant as the noodles. It was quite tasty and low carb as is everything I make these days to deal with my diabetic issues. The recipe recommended not freezing the leftovers so I guess I will be eating it for the next couple of days...
Fresh asparagus with hollandaise sauce. I put too much lemon in the hollandaise, but otherwise it was great.
Black bean soup with homemade corn muffins. Perfect for a dark, wet, dreary day.
Leftover turkey dinner frozen on Thanksgiving. Also good for dark, snowy day we are having. Maybe we will eat by the woodstove.
Cream of broccoli soup. Using a recipe that substitutes tofu and coconut milk for dairy or cheese. It all gets blended
Potato salmon chowder, chive onion muffins and spinach salad.
These soup sounds so good! I wish I could have pinkytoe and Roger cook for me.
Got too many peppers so made stuffed peppers. Haven’t had that in years…. was good.
Another variation Happystuff …
I combined a few recipes and added my own touches too based on what I had on hand. I cooked the cut pepper shells (used 2 medium size peppers & 1small pepper) 5 minutes in boiling water before filling so it did not have to cook as long. The recipes said to use either tomato sauce or canned tomatoes. I used stewed canned tomatoes (about 3/4 cup), brown rice & quinoa mix (1cup) instead of plain rice, 1 small onion and used ground sirloin (1/2 pound). Garlic, salt & pepper added. Cooked all together then stuffed into cooked pepper shells and topped with shredded cheese. Baked 15 minutes at 350 degrees and amped up to 400 to brown top).
Recipe for 4 servings. Thought might be bland so put siracha sauce on table but was tasty without. Was going to freeze a few but DH vetoed saying he would eat again in a few days. It is not something I would want often but is a good way to use up extra peppers.
Thanks frugal-one and IL,for the recipes. Seems similar to what I did, but I will definitely try again down the road. (Give the family time to forget about the failed attempt. ROFLOL)
Roasted Brussel sprouts, baked tofu, and rice with a honey sesame glaze. It's a favorite when there's some extra time for prep. I have this woman's hard copy cook book and it a go to cookbook for several things.

Homemade lentil soup and grilled cheese
Shrimp and grits with avocado, grapefruit, spinach salad.
Tonight is going to be buffalo chicken drumsticks and steamed cauliflower. The drumsticks were on sale half off at Safeway today. $2.38 for about a dozen of them. And the cauliflower is left over from a friend's party saturday where it was served cold with dip.
The Christmas festivities start today. Will be going to sil's for Santa and dinner. Various pasta dishes and I'm taking the garlic bread.
Polenta with red sauce. I just recently discovered Bob's Red Mill Polenta, which cooks up in about 5 minutes, as opposed to the longer constant stir method I recall. Enough left over for a fried polenta and syrup breakfast.
DH makes a wonderful butternut squash soup made with apples, coconut milk and spices so that is what we had along with salad.
Last night was a pan of various veggies and root veggies grilled and then served on couscous. We're trying to do a couple nights of vegetarian, so that went well.
