Curried beef stew with wheat couscous and salad. Its cold and windy!!! DH made a phyllo crusted apple concoction for dessert.
Homemade spaghetti, salad and garlic bread.
Yeah, in this house that would be a side dish. Where's the protein and the fat? If that's all I got to eat, I wouldn't be eating keto, either.
Tonight, either a tri-tip steak or a pan-roasted chicken with lemon. Depends on how ambitious I feel. Either green salad or brussels sprouts for a side.

Eggplant parm.
Curried red lentil "stew" cooked with coconut milk, sweet potatoes and cauliflower. Served over brown rice. Salad. Trying to eat less animals.
I’ve been well enough to do some things at home - so about 3-4 times a week I make something in the kitchen. (Husband does all the grocery shopping for me. It’s awesome.) I’m enjoying getting back into the simple healthy habits I had in the 80s. Being at home accommodates this. Bright side of my situation.
I made this one a few weeks ago, and again today. It’s a winner. We like it with taco chips.

Steve - I’m wondering if this would be keto approved?
Locally sourced artisanal jalapeno Havarti cheese surrounded by wild yeast leavened baked wheat dough seared in grandma's cast iron pan. (yes, I'm having a grilled cheese on sourdough, but the cheese is soooo delicious that saying grilled cheese wouldn't be doing it justice.)
