I get homesick for Tex-Mex food so I made bean rolls and Mexican rice with an avocado salad.
Quinoa with mixed veggies and chicken mixed in.
Last night was nachos. Tonight is Sausage and Potato Casserole. Good stick to your ribs kind of dinner.

I think tonight will be leftovers. With all that I've cooked the last couple of days, there are plenty in the fridge.
Currently simmering heirloom Christmas lima bean with a vegetable stock. I'm not sure what Christmas has to do with the beans, but they are really large and sort of pinto colored. I plan to eat them with gorgonzola cheese crumbled on top, but should have enough left over for a soup or stew.
We had a few warm days this past week so DH smoke a whole chicken for use in various dishes. Tonight is pineapple chicken. Extra tasty with the smoky flavor.
Did a new recipe last night - Egg Roll in a bowl. It turned out well! I used a bag of premade coleslaw (no dressing), some ground turkey and scrambled egg. Everyone liked it! The only drawback was that there was not enough - LOL. Will use TWO bags next time!
Anniversary so we are going out to a Jordanian restaurant. Should be interesting.

Tonight is going to be jambalaya since it’s Fat Tuesday.
Ham sandwiches on wheat with Miracle Whip. Eaten while soaking in a hot bath. Ham is from a ham steak. Yum.
And it’s a one pot meal. It takes the better part of two hours because there’s a lot of dicing and just a lot of steps generally. But nothing difficult. Just work through it. It’s cooking now. Just have to add the shrimp at the end and then the best part. Eat!
We’re having a nice Sonoma Zinfandel with it since Zinfandel can stand up to spicy stuff pretty well.

Did some food prep yesterday so have dinner already to go for tonight... chicken and broccoli casserole, probably over rice.

Last night was BBQ Ranch pork chops in the crockpot. Tonight is spaghetti, garlic bread, and a small salad.
Tonight is mac 'n cheese one-pot dish with hot turkey sausage and peas.

Not sure if I mentioned here that DH is suddenly sous-viding his butt off! I didn't know anything about sous vide, but he, being obsessed with all things cooking, wound up splitting a sous-vide unit and vacuum sealer with my daughter. So tonight he's sous-viding chicken quarters.
We went to an historic diner on Rte 1 and I had haddock chowder and DH had chicken parm on spaghetti.
Tonight is braised chicken with turkey bacon (recipe calls for pancetta but I don’t eat pork). It also calls for some sort of anise liquor called pastis but Safeway didn’t have it. Or even white sambucca. so I’m using the black sambucca we had already. The sauce may be a bit darker than the recipe author anticipated….
Dreary, over-cast day so tonight will be some kind of soup in the cp.

Us landlubbers in the middle of the continent have trouble getting a good cioppino or fish stew. I have fond memories of a bouillabaisse when travelling the PNW years ago. I have made some amateur attempts to fix something at home, but need more practice.
The braised chicken was OK. Not fantastic, but not terrible. Flavor-wise it was great, but I was expecting a thicker sauce. But there was so much liquid from the sambucca and white wine that it just didn't boil down much. The overall flavor was good so I'll try and tweak that for my next attempt. Maybe half the liquid?
Last night was Beef Noodle Bake which I really didn't want but made it anyway. Tonight is breakfast for dinner. Eggs, bacon, biscuits and gravy. Yum!!!

I'm thinking of making cauliflower steaks. I tried once before and just ended up with roasted cauliflower. LOL.
Gortons fish filets! Take 25 minutes, crisp, crunchy, tasty. I am NOT a fish lover, but these are tasty to me. I like fresh trout and cod. The filets were on sale.

Stir fry over brown rice with a homemade peanut sauce.
We have take out on Fridays and Saturdays. Last night I had to make the rounds to get everyone what they wanted. Taco Bell for the husband, McDonald's for me and the boys, and lastly Burger King for frozen Cokes for all. Good thing they are all next to one another.
Tonight is pizza. Not sure if it will be from Pizza Hut or Three Brothers.
Tonight is just turkey burgers. Kitchen is still in mid renovation so we're keeping it simple.
