I am thinking calzones, as I have some ricotta cheese that needs to be used.
I rarely eat red meat anymore but have had a real craving for a steak. Bought two small ribeyes for a somewhat reasonable price and DH is going to cook over mesquite. Creamed spinach and a salad.
I made a cabbage barley mushroom soup, and BIL, DS and DIL are here so we're also going to make a roast chicken with potatoes and a veggie we haven't decided on yet.
Box of Aldi brand deluxe mac & cheese. This is the one with the pouch of cheese sauce. May add some peas. I was away for the weekend at a Great Lakes shipwreck event in WI so I want something easy v
I think it will be bbq shredded chicken over rice with some kind of veggie.
Today is taco monday. I stumbled across a note in my phone for a sauce made from avocado, lime, chiles, garlic, onions and mayo, all blended together. I believe it was served with huevos rancheros when we were in mexico. I don't really remember the details so I'll be reconstituting the chiles in water and then sauteing the onions and garlic a bit. That may or may not resemble what I ate. I mainly remember that it was DELICIOUS1 Who knows how it'll turn out...
Well, up here, it's half-price pizza night so that's what we're having.
Pulled a package of turkey sausage out of the freezer. Hoping to get two meals out of it - sausage and noodles, sausage and cabbage. One for tonight and the other for towards the end of the week.
Crock pot roast chicken with carrots parsnips potatoes and onions.
I made Thai-style minced chicken lettuce wraps. A favorite of ours. There's a recipe online from PJ Chang's restaurant that's darn good--and actually pretty easy to make.
Last night oldest got home from travel so I made his favorite dinner of sausage and potato casserole. Good thing I didn't wait until tonight to make it because he texted me this morning and said he's leaving for travel again today for work. Tonight is homemade bacon, egg, and cheese mcmuffins.
I think today will be homemade pizza. I have enough to make two for tonight and put two in the freezer for another night.
Yesterday ended up being kielbasa and potatoes in the crockpot. Pizza will be tonight.

We’re just doing turkey burgers tonight.
A while back our friend that lives 10 minutes from here and lives alone got us started on a ‘Sunday supper’ thing where we alternate between her house and ours cooking for the three of us. Tomorrow is our turn. I use it as a chance to try new recipes that sound fun but maybe take more time. So tomorrow I’m planning to try a gumbo recipe I found. It sounds pretty easy, just time consuming to let it simmer. I can do most of it before she arrives and then be able to hang out with her and SO while it finishes cooking. And one of the commenters on the recipe had what seems like a great suggestion. Instead of leaving the tails on the shrimps for added flavor, avoid the hassle of dealing with tails while eating by taking them off, boiling them and using that broth as part of the broth for the gumbo.
Easy five bean soup in cp and I'll make some cornbread before I head into work.

A friend took treated me to a belated birthday dinner. We went to a favorite local Middle Eastern place. I had a pita stuffed with falafel and veggies, plus hummus and pita on the side. Yummy. Friend had a mixed plate with hummus, baba ganoj, dolmades, falafel, and some Arabic salad.
Tonight is sloppy joes. Tomorrow morning will be a sloppy Joe breakfast burrito with the leftovers!
chicken tenders marinated in sour cream yogurt rosemary and dijon...baked at 350 for 20 minutes. They were delicious. My husband cuts the tenders from boneless chicken breast when it's on sale. We put them in separate freezer bags and I just dump the ingredients into the bag, squish it around and let it sit in the refrigerator for an hour or so. Lay on a foil lined cookie sheet and YAY! Good dinner, no pots...baked potato- 3 min. in microwave and finish up in the oven with the chicken.
Meat and cabbage pie - if I get off my duff to make it. LOL
Leftover Easter dinner: ham, scalloped potatoes, corn, beans, and a leftover piece of the wonderful homemade carrot/coconut/pineapple cake my DIL made me for my birthday!

Tonight I make roasted chicken. DH has been under the weather, and he's the family chef, so before I stuck it in the oven he admonished me to look up Thomas Keller (French Laundry) to learn how to roast it properly (as if I haven't cooked it "properly" for 50 years). I have a lot of veggies in the fridge I have to get rid of, and I actually have some wild rice from the Objebwi in MN that my SIL gave me.

Haven't posted here because I simply haven't been cooking. LOL. It's been catch-as-catch-can around here this past week. Do have some veggies that need to be cooked so may make... something tonight. lol
Tonight is chicken wings. We’re trying to eat up enough stuff from the chest freezer in the garage that we can turn it off for the summer and save the electricity during the hot months when it has to work hard.
I have not been making dinners lately. Too much going on during the day before work. Plan is to eat down the freezer so the whole thing can be given a good clean-up/out.
Speaking of pulling things out of the freezer to clean it out, we’ve been eating vintage applesauce this week. It’s 12 years old. Hasn’t killed us yet.

okay----here's REAL FOOD for REAL PEOPLE, in two different places. But yeah---one is a fresh steak direct from hoof-to-grill! Nuna that "lockered" stuff, for small-town IWAH People(see photo). The other is an exquisite goat meat meal sauteed in random herbs grown out back by their own chef, at that place in Zurra called: "Nine-Eleven Mizzurra". Yup. (see photo). Yummy. Delish.
