A few weeks ago I ran across two fellows in their 70's who had both had significant health problems. I did not pry into the nature of them, but they had both been on a vegan plant based diet for years and said they thought it had saved their lives. I've read the book on the blue zones and another book by John Robbins that referenced the China Study, so we had a good talk. They said they'd been anxiously awaiting the How Not to Die book and used his resources on his web site. Both guys looked ten years younger than their age. One had just returned from a ski trip and said his cholesterol went down about 40% and he lost 40 pounds the first year on the plan. The other was planning a trip to Tibet.
So I read the book and am now a human experiment. I had what I thought was a decent diet, but have had border line cholesterol and a tad over weight for years. We'll see what happens.

I'm at work on the BEAUTIFUL hot day :( that's what I brought for dinner.
We had a nice Pesto pasta, My mom cooked it. :)
Poached salmon, with new season's local asparagus and Jersey Royal new potatoes served with home made mayonnaise.
Thai green curry chicken with coconut milk and fresh green beans. Should be about ready.
Fish sandwiches over here! Nothing fancy. I might grab some blackberries too.
Black bean and spinach enchaladas with vegan fake cream cheese and green onion topping.
