Snowed in so trying to get creative with pantry and freezer stuff. Orechiette with Italian sausage, roasted butternut, spinach and parmesan. Citrus salad one more time - avocados and grapefruit.
Chicken Marbella in a dutch oven with chicken breasts, potatoes we grew, portobello mushrooms, capers, red wine vinegar sauce, and trash lettuce!
Tonight is going to be chicken and dumplings. Friend is coming over and rest of the family asked. Now I'll be making a double batch. LOL.

Coworker sprung for dinner last night as a wonderful good-bye treat - Chinese. This afternoon will be birthday lunch with family - soup dumplings! So "dinner" will probably be catch-as-catch-can. LOL.
Decided to go healthy. Made a big salad last night with seasoned chicken, cheese, dressing and croutons on the side. Yum! I love a good salad!
in my ongoing effort to use up food items that have been around for a while, I had two frozen pie dough forms I had to use up.
So in one I made a savory hamburger pie. And in the other I made a rhubarb pie using frozen rhubarb from our garden. Both are a really quite good, I surprised myself.

I made curried red lentil soup. I have not made that before, and it was delicious.
Thanks! We're trying to do better--we got off the very healthy eating program into a lesser way of eating the past few months and our feelings of well-being suffered so we're back on the veggie/whole food wagon...
Soon off to the grocery store to re-supply organic produce. Organic is more pricey but figure we'll be saving on the no-buy animal protein so it'll be a draw...
Eating Imam Bayaldi - twist on a Middle Eastern classic. This is eggplant fried in olive oil, then added to simmering onion, garlic, tomatoes, and simmer longer. Serve over couscous. Season with kosher salt and fresh ground black pepper with fresh squeezed lemon on top. So yummy.
Last night was tilapia with steamed broccoli and wheat berries. Not sure about tonight.
LOL - interesting that I'm not that well-planned for dinners these days. I think it is because I now feel I have all day to figure it out and do it.
We made falafels last night...really like them...used a mix but just found a recipe that I'll try making next time. Anyone else enjoy falafels??

Yep, making from scratch requires a number of fresh herbs I'd have to buy..later in the summer I might have fresh growing. The very best one we ever had was in Paris of all places--the line to get 'em was very long--but darn--they were amazingly delicious..they added some thin sliced grilled eggplant to them..never had it that way before...
Homemade mac 'n cheese casserole w/peas and sausage.
last night - - spaghetti squash casserole. Simple and cheap. And yummy. Grilled cheese has been requested for tonight. Another simple, as long as I can scrounge up enough bread of the sorts make people happy lol. DH likes white. DD and I like whole grains and some sourdough. Second (adult) kid likes anything but does not like grains they can "feel" - it's a texture issue. Cheese, otoh, we have in varied abundance- which is good as we all have different combos we prefer. So grilled cheese, while simple enough to make, is difficult to pull together, lol. But I'm really happy to have a plan for dinner this early in the day. I'm usually more in the 4 PM deer-in-the-headlights what the heck are we gonna eat tonight camp.

Only kept down two meals this week, I couldn't even keep down a half a banana Tuesday, or water, multiple times this week.
