Something with beans. LOL. Cleaning the pantry and used up some smaller portions of a variety of beans. May end up as soup with cornbread. Or maybe over rice. Or maybe both. lol
Yes to the beans!! Made a chili with very little meat, beans and four veggies chopped up in it (celery, green bell pepper, carrot and onion, garlic--wait, that's 5.) And a simple spinach/arugula salad with some red pepper and black olives. We're on a Spring detox adventure--eating lots of veggies and beans...red grapes for dessert.

Going to make some sourdough pizza crust, but not sure I'm in the mood for pizza tonight. LOL.
Pulled some pre-cooked shredded chicken out of the freezer. Think I'll make a big salad and just have the combo for dinner. Feel the need to eat "lighter" today.
Tried a new recipe...pasta with a lemon, caper, sardine, red pepper flakes, olive oil sauce.
It was different and quite good. Reminded us of a Caesar dressing flavor.
We actually had red peppers stuffed with a farro/grape tomato/parmesan/anchovy filling, baked for 20 minutes topped with some mozzarella. Next time I will probably sub anchovies for shrimp.
Last night we had split pea soup and a raw beet/carrot/apple salad with yogurt dressing. A chilly night so the soup suited. Tonight I'm making easy eggplant parm and more of that raw salad...

We are having an asparagus pizza. Par-baked dough, ricotta & mozzarella spread, asparagus spears, red pepper flakes. Bake 15 min at 400.
Went to a Korean restaurant (whole family!) for dh's birthday. Very expensive but sooooo good!
HS, we don't go out to eat much, but I was shocked by the bill last time I took the grandson out to lunch. A French dip & a BLT, ice tea & soft drink. $54 + tip!

I had tomato sandwiches. Work has been so insane lately I feel like cooking even less than usual. I’ve had grilled cheese, eggs, pasta, plus tomato or tuna sandwiches. This week is Holy Week with services each night so I’ll grab quick stuff.
Cloudy and overcast, so I think I'll throw a chicken stew into the cp.
Did pizza last night, so that chicken soup is tonight.

Friend brought over a pork loin, so have not quite half in the cp and will give the other half to next door neighbors. Will have it with the leftover veggies from easter dinner.
Made a new recipe to me, dumpling salad--you cook potstickers and combine with a prepackaged Asian salad mix from the grocery-- it was super easy and really good.
nswef. Thank you. I check in every so often! Sauce Balmoral can be used for both steak and chicken. It is a whisky, cream and mushroom sauce. Very tasty!

Well, at the crack o' dawn I fixed a pot o' Bean soup using Beans---canned beans---salvaged from the deep discount dent n bent outdated and post best-by place down the street. But yeah--i picked up a whole case a couple months back and just tried 'em. I hadta put some other stuff in the mix, but the main ingredient was BEANS. So anyway---Ihad beans for three square mealsd, today. Yummy.
Sardines on whole wheat bread with mustard. I saw an article saying how healthy sardines are and then saw that the NYT cooking section has a long list of sardine recipes. I try every year or two to like them, but I'm not sure they can be salvaged with a fancy recipe. My father would eat sardines on saltine crackers and also onion sandwiches with cheese and mustard. I wonder if that is sort of a dad thing. I can eat an onion sandwich.
Shrimp & grits. Again.
LOL. Just got back from a trip and the cupboard is pretty bare! But, that's fine. Maybe I'll be up for shopping tomorrow. I'm in now rush.

Will not tell you exactly but will share this: I went to a program tonight at our library and there was a buffet set out. So I proceeded to eat all the "forbidden" foods I don't normally eat. It was fun! Back to basics tomorrow...
Made some kimchi fried rice tonight using left over rice and some shrimp that I bought on sale :D

Ended up with Swedish meatballs over rice, with broccoli.
Huge bag of freshly picked spinach just landed on the table here, so I will have to do something with it. I already have salad made for 3+ days.
Tonight's dinner is spicy Japanese curry with chickpeas :~)
