DH misses his Texas food and is very happy when he is outside smoking brisket. Thus I conceded for our 40th anniversary meal. Brisket, smoked corn, roasted fingerling potatoes, strawberry cheesecake, red wine. Back to vegetarian and salads next week...
Three cheese eggplant and spinach bake - not my usual Mexican cheeses blend but ricotta, mozzarella and parmesan.

Some Lebanese food from the Farmer's Market with a tomato salad. I had read somewhere recently about tomatoes with mint and goat cheese instead of basil and mozzarella, so I gave that a try. Not bad, but I like the traditional caprese better.
Aldi made dinner tonight -- their organic chicken breast filets with cilantro-lime marinade/sauce. That and leftover cauliflower (also from Aldi). Quick and easy after a busy day. Pretty tasty, too, considering the effort.

Rump roast, mashed potatoes and gravy, carrots roasted along side, corn.. dark chocolate for dessert. Not the healthiest but bought from the local farm down the road... only have a few times a year.
Oatmeal with blueberries and maple syrup. Light dinner.

Lasagna, made low-carb by usiing eggplant slices instead of the pasta:
Keto Eggplant Lasagna

Ingredients
1-1.5 pounds eggplant
3 eggs
8 oz whole milk ricotta cheese
1 tbs parsley
1/2 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1 tsp Italian seasoning
1 cup low-carb spaghetti sauce
1.5 lbs ground beef
1.5 cups shredded mozzarella cheese
Instructions
Spray the bottom of a baking sheet with cooking oil.
Slice the eggplant into quarter-inch-thick slices the long way and lay them on the baking sheet. Drizzle olive oil and salt over all and bake for about 10 minutes at 375 degrees. Parcook the eggplant just enough to make it soft; it will cook further in the oven later. Remove the eggplant slices from the oven and set them aside while you prep the remaining part of the meal.
Brown the ground beef in a skillet. Season it with salt and pepper.
In a small bowl, mix the ricotta cheese with all the seasonings and the eggs.
Spray the bottom of a 9 x 13 pan with cooking oil.
Layer the ingredients:
Put in the eggplant slices
Then spread a small amount of sauce over each slice
Then spread a small amount of mozzarella cheese
Then spread a generous amount of ground beef
Then spread/drizzle some of the ricotta cheese mixture
Repeat these steps two or three times.
Finally, put the rest of the shredded cheese on top.
Bake at 350 degrees for about 40 minutes.
Allow the dish to slightly cool before you serve it so the lasagna will stick together when you serve it.
Served it with steamed zucchini from a local farmer's market. It needs .... something. More garlic? Some crushed red pepper? Unsure. It was tasty; we have plenty of it left to eat. But I'll be trying to figure out what makes it really tasty. Suggestions?

My garden Japanese eggplant have started to come in. Tonight it's stir fried Thai basil eggplant with udon noodles.
Chicken pot pies from the leftover roast chicken we had yesterday. I love that not only can we use the leftover meat but also make broth from the carcass to use in this. So satisfying to really use the whole thing for multiple meals. We'll still have enough meat left over to make either chicken quesadillas or chicken enchiladas later this week.
Today going out to lunch with friends so the men are are their own with leftovers from the last 2 dinners.

After last night's bland oatmeal dinner, tonight we're having mushroom bourguignon, supplemented with a LITTLE beef for the meat-lover in the family. It's one of our go-to meals.

I recently got a bunch of Thai holy basil. mixed mini-peppers, and chicken meatballs, so I'm thinking of making something with those ingredients plus onions, garlic, ginger and Thai curry paste. Probably with rice or rice noodles.
Tacos last night. We are getting more and more veggies in the house, so I think I'll break out the spiralizer and noodle up some squash and zucchini, with a fresh tomato and mozzarella salad.
