Turkey soup, turkey over noodles, turkey sandwiches. Turkey turkey turkey. I let DH buy the turkey and he got an 18 lb one, too big for us.
Already planned and mostly bought our Christmas meal. Rolled boneless turkey roast, TJ's cranberry sauce, cheesy potatoes and a Village Pie Maker frozen pie in cranberry/apple. Freezer is full. All we will need is sour cream for the potatoes and ice cream for pie. Got the turkey and the pie on sale.
I was given the option of taking it and said "yes"!!! Just finished simmering it, straining it and picking it. Soooo much meat left on the carcass - at least two meals, if not more! And at least two quarts of broth (gave some to child, who made a surprise visit. LOL)
However, I also had two bags of sweet potatoes that needed to be dealt with, so I baked them, mashed them, added ground turkey, broccoli, and shredded swiss cheese. Sort of a twice baked potato except that the skins were unsalvagable. Put the miss into pie pans and will bake one for dinner. (three others in the freezer)
Made turkey pot pie this afternoon. Could have used a bit more salt, but the crust turned out!
okay-----noodles of some kind, boiled, and topped with cold sketty sauce of some kind. shredded lettuce, with ready-made fried onions and itaian-style dressing. The cheapest brand, too. Pepper on all of it. Yup
Five-hour stew. Cuz I can throw it together at noon and forget about it.
Made a really good soup in the cp yesterday. Thinking homemade pizza from the freezer and salad for tonight.
Need to grocery shop and no left-overs in frig so husband just left to pick up our Chinese order of Singapore Rice Noodles and Hot n Sour soup. Will hit the spot.
We are having a salmon fillet. Also cabocha squash souffle. Both squash and fish were given to us.
Tonight will be leftovers. Too many still in the fridge. I definitely need to learn to cook smaller quantities for dinner. LOL
HS, my hubs is SO disappointed if there are no leftovers!
Tonight we are having spaghetti squash sloppy joes.
Crockpot split pea soup tonight.
Senate bean soup with red cabbage, arugula and farro salad. And DH's sourdough bread.
My dh takes leftovers for work lunches, but because I'm still cooking too much, he gets tired of them and hates when I claim them to be dinner again. LOL.
Is there a recipe for thet spaghetti squash sloppy joes? I'm always looking for a new way to service spaghetti squash.
I wanted something quick and easy tonight. It was a frozen meal in a bag. Bird's Eye garlic shrimp and veggies with pasta. It wasn't too bad. Healthier and cheaper than fast food.
Made ham and navy bean soup. It was really good.
Grilled cheese sandwiches anf tomato soup.
Cabbage, onion, cauliflower, sausage bake.
Made spicy honey garlic chicken tenders with purple sweet potato and broccoli
okay----i tell you what---people in iwah will drive through a blizzard over icy roads, justa sit-n-eat summa this. (see photo). Notice the littlebitty teeny tiny lettuce salad, to make it healthy. Also, a piece of bread, to soak up the yummy grease. But that's iwah. Yup.Attachment 6664
Went to the Farmer's Market with some friends yesterday and splurged on some gourmet burgers. That was dinner last night - just the burger, no roll or anything. It was huge and wonderful. lol
Chicken thighs in the air fryer.
Homemade minestrone soup and chana masala and rice. Italy/India mash-up.
Scored 1 lb of cubed steaks for about $4, so I'll be cooking those tonight along with baked yukon gold potatoes and some garlicky green beans. Will probably make a mushroom sauce for the steaks.
Tonight is Christmas Eve at sil's. I believe she is making baked ziti and I have the salad.
Off the cuff meal tonight..we had spicy Asian peanut butter soba noodles--and pumpkin pie for dessert. It's what we were craving. Just polished off the last of a turkey breast over the last 4 days--tired of poultry.
okay-----made a run ta wallywortld for provisions, including a really CHEAP paint brush ta slap on a coat a paint on my workbench, and guess what? They had freshly canned corn for 50 cents so i snagged me a whole case! Yup. But yeah---i can eat 'er right outta the can or mix it in a pan with some other stuff ta fix me some corn chowder. Also, got some a their sweet corn bread. Howdya like that? Lot cheaper than one a them fancy rest-O-rants that charges $100 for a little food on a big plate. Ha.
Happy: That's what we're having tonight at my sister's house.
Bobby: Corn chowder makes me feel cheated because I expect my chowder to have clams or fish in it. (Picture me banging my spoon on the table, querulously demanding, "Where are my clams?") lol
We were at our cousins' last night. They do a nice little spread of appetizers and desserts, and this year, they had a platter of the most amazing sushi! I honestly only had eyes for the sushi. It was really wonderful.
We get a Bob Evans Farmhouse Feast ham dinner every year. Delicious and easy clean up.
Making chicken adobo longanisa, brown rice sinangag, and fried eggs.
We did an un-frugal thing and had our New Years meal out today on Jan 3. Paid way more than I am comfortable with for some tasty Indian food. So the leftovers will do for tonight.
A dish I've cooked for New Years the last couple of years is cioppino which is basically a traditional fish stew with a catch of the day. Snow crab clusters go on sale this time of year, at least here in the middle of the continent. A couple of varieties of a mild white fish, a few shrimp, clam juice, etc. Left overs freeze well enough to pull out for company.
Chicken smothered in bbq sauce with frozen mixed vegetables baked in foil wraps. Very good and enough chicken left to morph into a stir fry.
We had turkey meatballs in spaghetti sauce and a salad.
