Trying once again to eat healthier, so last night was eggplant cooked in chopped tomatoes with some olive oil and curry, over quinoa.
Tonight will be shrimp, but haven't figured out the details.

We ended up having sautéed shrimp with a large salad.
Coconut braised beef tonight. Yesterday was local-restaurant-takeout night -- a Rachel sandwich for DW and a Cubano (sans bread) for me.
Instant Pot hamburgers (first time for those), and maybe a salad.
