I make something very similar to this quite often. Just don't usually have pretzel buns, but yum, that sounds great!

I think we're having turkey chili tonight.
I keep it in the freezer after the duck is cooked, and I've let it cool and skimmed off the fat on the top. You can certainly freeze the skin to cook later, but you really kind of need to do something (the skin as is isn't useful imo).Quote:
