    I've been thinking of doing oatmeal breakfasts for a few months. Given Ancestry's assessment of how Scottish I am, I should probably be doing it just for survival.

    I eat a lot of cabbage in various ways. Slaws. baked etc.

    I love cooked cabbage but it makes DH gag but he will eat it fresh. So we eat a lot of Cole slaw during the winter and yep, it is cheap.

    I am also a fan of cabbage - both cooked and raw. Sometimes forget about using it though. I think I needs a list - LOL!

    I'm always amazed at how far lentils and rice will go. The standard brown rice and lentil casserole I make uses 1/2 cup brown rice, 1 cup of lentils, a shredded carrot and cheese - if desired. It ends up making enough for three adults, usually with some leftover.

    happystuff, would you please share your brown rice & lentil casserole recipe? It sounds like something I would really enjoy. Thank you!

    2 cups broth
    1 cup water
    1 cup lentils, rinsed
    1/2 cup brown rice, uncooked
    1 small onion, chopped (I don't like, so I don't use. LOL)
    2 tsp Italian seasoning
    2 cloves garlic, minced (I use more)
    1/2 cup shredded carrots (I use a whole carrot - ends up being a bit more than 1/2 cup sometimes)
    1 cup favorite shredded cheese (I use swiss or mozzarella)

    In 9 x 13 baking dish, combine all ingredients except cheese. Cover with foil and bake at 300 degrees for 1 hour and 10 minutes. (I use my casserole dish with lid) Remove from oven and remove foil (I stir at this point, as the seasonings tend to float to the top.) Spread cheese over top and bake for an additional 20 minutes, uncovered.
