    Yay! Oysters! One of my favorite dishes is Oyster Rockefeller...that combination of flavors really does it for me! My Mom made the best...I keep looking for them as good as hers...

    I remember liking oyster stew a lot in my youth but have not had it for a long time. Being so far from the coasts has some major disadvantages when it comes to fresh and reasonably priced shellfish and other seafood. Mussels are usually in my budget. We do have oysters of a rocky mountain variety, but hardly a favorite.

    Did your mom put a little bit of bacon on top before roasting? My mom did--that melting on top of the seasoned bread crumbs atop the creamed spinach and etc. was the best!

    Yes. I went and looked for the recipe and could not find it although I remember the items you said. Will keep looking although it might have been Joy of Cooking recipe and I can't find my copy?

    I did find this one that might be interesting "Oysters Savannah- Pirates' House"

    The Pirate's House – ARGGHHH
    1 lb bacon
    1 c chopped green peppers
    4 oz canned pimentos, chained and chopped
    1 tsp salt
    1/2 T paprika
    1 qt oysters
    rock salt

    chop uncooked bacon fine, add peppers, pimentos, salt, pepper, and paprika. Fill natural oyster shells with oysters. Cover with bacon mixture. Heat rock on steel platter or boiler pan covered with aluminum foil. Place filled oysters on heated rock salt and cook under broiler until golden brown on top

    If you don't have the shell, make in a 1 1/2 qt casserole, alternating layers of oysters and bacon mixture ending with bacon on top. Bake at 350 for about 40 minutes.

    I never have oysters without thinking of my mom & a storm event from 1962, the Columbus Day storm here in SW Washington & the PDX metro area.

    We were without power for a week. Of course, with 4 kids there was a lot of milk to deal with as well as this large portion of oysters to use. We did have a fireplace so mom made oyster stew. The only drawback was that every time she opened the pot to stir or serve, ashes flew in. I still know the taste of ashes.

    My Mom dealt with all that plus one in diapers. My dad was in eastern WA deer hunting and had no idea there'd been a storm. The best part was all the stores uptown were giving away ice cream.
