We haven't had a "what's for supper" thread in awhile, and it occurred to me that many of y'all are probably eating what we are this time of year: lots of fresh produce! So chime in with your menus and ideas. Gardeners, CSA-er's, farmers market-er's - it's that time of year to gorge on freshness. How are you eating/coping with all the freshness? I can always use more/new ideas for using what's on hand.
I've found myself these last few weeks not really planning my weekly menus like I usually do - we seem to do better this time of year just "going with the flow" in terms of what fresh produce comes our way. Day before yesterday my truck driver at work showed up with his first home-grown cantaloupe of the season, he knew I'd buy 3 or 4, so I made a meatloaf and we've gorged ourselves for 2 days on meatloaf and cantaloupe. The cantaloupe was OMG sweet and delicious. And fresh.
Tonight's supper: the last of the meatloaf, and the last of the KFC chicken (DH simply cannot come home from his out-of-town doctor's appt. without buying either KFC or Long John Silvers - I don't approve, but can't deny the stuff is pretty tasty). Having with 2 skillets of fried okra, picked this morning by me in the garden, again OMG this stuff is good. I swear you can SMELL the fresh, along with how good it tastes. And 2 garden tomatoes, sliced and chilled. Very simple, and very good.
Tomorrow night's plan: tacos (taco shells are on sale in the sale ad) with homemade pico de gallo. I already cut up the (garden) tomatoes, in the morning will add the garden onions and peppers and basil, and the store-bought other ingredients. (I'm not to the point of ALL fresh ingredients yet.....but it's a start!)
