A big salad with last night's grilled chicken! Yummy!
shrimp and red bell pepper served over chickpea spaghetti with pesto.
Tonight: a Vietnamese beef and "pumpkin" soup made with two beef shanks that toook forever to get tender and most of a butternut squash that's been hanging around longer than I'd like.
Vegetarian chili with veggie and hummus dip - carrots, cauliflower and peppers . Add a Granny Smith apple and some Limburger cheese.
A couple enchiladas and celery microwaved with cheese on it.

Rainy weather here so I'm prepping a stew in the crockpot.
Hellman's mayo recipe- Chicken thighs parmesan- 1/2 cup Duke's mayo, 1/4 cup parmesan, 4 tsp. Italian bread crumbs ( I crunched up croutons) Oven preheated to 425, mix mayo and parmesan, spread on thighs ( one had skin, one not), put on breadcrumbs- bake about 20 -25 minutes
It was very tasty after a day working in the yard!
