Still trying to eat down the freezer a bit so that I can clean it before my minimal winter restock. I'm thinking some simple beans and rice with maybe a side of cauliflower. There are still leftovers for anyone who wants something different.
Homemade vegetable soup to clean out the pantry and homemade wholewheat bread.
I had splurged this past week on some pork roll, so we have porkroll, cheese and sprouts on homemade sourdough tortillas last night. Tonight I'm putting some chicken legs in the cp with some bbq sauce. Have leftover sweet potatoes and turnips that I may mask as the side.
Coconut flavored almonds and a keto frozen peanut butter flavored bar.
A Scottish forfar bridie and mac and cheese. Mmmm!!!
Leftover roasted turkey leg, leftover cabbage, leftover broccoli. It's Friday at our house...
Just put the making for the first beef stew into the crockpot. If I'm motivated by dinnertime, I may make some biscuits to go with it. Can't wait for the smell to start permeating the house.

Actually, I made this soup and it's awesome. I'm definitely adding it to the repertoire. However, I didn't put beans in it (only because a couple of people in my family don't like beans, but I love them, so I would have put them in) and I also swapped out tortellini for ricotta cavetelli because DH doesn't like tortellini. Also, I used diced tomatoes instead of crushed. I like diced better because it less thick and more brothy

Trying to make a decent "dinner" before work (to be eaten about 2 pm before going in), which will also mean something is there for dh when he gets home. Today was pan-cooked thin chicken breast fillets with sauteed turnip greens and chunky mashed potatoes & turnips.
Ooh, the turnips sound so good.
I made a pan of sauted greens, onion, garlic, mixed with grated cheese and a few cups of wild rice. 4 beaten eggs, 1/2c milk. Oh this was a yummy dish! One morning I heated some up and topped with 2 easy-over eggs for brunch!
Today: mac n' cheese w/diced ham, peas and corn. I put a bunch of smoked paprika in my cheese sauce and did a super browning of my rouix. It was fabulous!
Baked stuffed shells and Caesar salad.
Tonight is leftovers, as there are way too many in the fridge right now.
Keto chili, a family favorite. By some weird quirk the high temp for today will be in the 80s. But chili it is.

I came up with a pattern that I sort of follow, or not. Tonight we're having LO: risotto with peas, meatloaf, salad. Except for the salad, it's all left overs, which is fine with us!
Tomorrow night I'll have to cook again, but last night and tonight it was left overs. Last night it was mashed yukon golds and marianated chicken (marinated in cilantro, lime, pepper, etc.) I shredded the remaining chicken thigh and we had it on a bed of mashed potatoes. Good!

Bocaburgers on brioche buns with fresh tomatoes that were picked green but magically turned red in the window.
Had family today for Thanksgiving (on Monday in Canada) so ordered Chinese food. I added fruit dipped in chocolate for dessert. The warm temps made it perfect for sitting outside for the cheese/crackers and veggies and dip appetizers.
Stuffed pepper soup and apple pie.
Something with ground beef and noodles, Italian-inspired. Maybe.
Homemade creamy potato soup with ham and perhaps freshly baked Mexican bolillo loafs. I haven't had much luck with breads so I have a few store bought ones in reserve. We'll see.

Yesterday was lentil and brown rice bake - always an easy favorite. Still leftovers in the fridge so that is probably for today.
DH made a huge pot of gravy with meatballs on Sunday. On Sun, we had meatball sandwiches and last night was pasta with meatballs. We haven't had this since spring so it was a real treat! We have enough in the freezer to feed us 5 more times.
Tilapia and some tomatoes my co-worker brought from her garden.
Neighbor just gave dh 1/2 of a tomato pie, so I'm off the hook on cooking before work. :cool:
Jambalaya that takes forever to make, unfortunately. So only have it about once a year. Put half in the freezer to enjoy another time too.
