Homemade pizza - plain cheese, spinach, and peppers & mushrooms.
We’re having the first of a 2 day heat wave here so I’m planning to cook an eggplant parmesan outside on the grill. Not sure how this will turn out since normally it goes in the air fryer. But it’s eggplant Parmesan. Unless I burn it or undercook it I can’t go too far wrong.
Leftover pot luck. Scottish mince, Chinese take-out from our trip to Jersey, Indian take-out from our trip to Jersey. Leftover tempura from our stop on the way home at a sushi place in Saratoga, NY. A real international buffet. The only leftover from this week no longer available is leftover Philly cheesesteak from Jim's Steaks on South Street, Philadelphia.
Easy pasta in meat sauce. I'm not much of a pasta fan in recent years, but the others will eat it tonight.
Grilled chicken wings and coleslaw.
Yesterday and last Friday we went to a bbq place in town and had great meals both times. But SO had wanted coleslaw as a side (as a diabetic he is trying to avoid carbs) and both times they didn’t have any. So I made it for the first time ever as a surprise for him. And it turned out fantastic. SO had seconds of both the wings and the coleslaw. Coleslaw will definitely be part of the rotation for veggies.
we eat a lot of coleslaw because DH grows cabbage in his garden. But I can’t say that I do anything fancy with it. Usually I just chop the cabbage in the slivers and use a commercial slaw dressing on it. I often slice of carrot to go with it if I’ve got carrots, and sometimes onions.
Salmon served with cream of broccoli soup.
I always plan our meals for a month and then shop afterwards. I don't want to think about what to eat every day.
If possible, I only shop once a month. That saves money and time.
