Not necessarily for dinner, but Amazon Fresh just provided me with an excellent hunk of truffled Gouda--Wyngard Affine' brand. An on-line wine store is offering five ounces for $13, but Fresh sold it to me for $7. (A luxury at that)
"These cheeses are first matured for approximately 16 weeks, then segmented and subsequently spread with a fresh summer truffle tapenade. The flavour...is gradually released into the cheese, and the result is surprising. You can taste the delicate combination of truffle and cheese as well as the cheese itself."
I also love homemade sweet potato fries.
This, with whole grain rice:

15 bean soup with ham....
Since partially recovering from covid but not working outside the house, I’ve been reviving my cooking skills from 30 years ago. It’s just enough to fill my days - reading recipes, cooking, dishes, cleaning, laundry, reading, and resting. With a short drive or walk with my husband thrown in a few times a week.
I’ve become the perfect 1950s housewife. :)
Eggs and sausage.
I’ve struggled to know what category I fit into these last 5 months.
Retired?
Disabled?
Unemployed?
Quarantined?
Each requires a different mindset, approach, plan ...
I’ve decided my category is “Alive”. And forget the plans. Just do my best each day.
It’s forced mindfulness. Staying in the moment. And some good food lately.
Veg Lasagne today!
Pulled some beef strips out of the freezer. Not sure what I'll do with them yet.
Getting takeout from outback today.
Last night was a pasta bake (with leftovers for tomorrow night). 2 packages ratatouille and 1 package of braised greens, 1# of fresh pasta from our CSA, layered with grated mozzarella and topped with fresh grated parmesan.
Tonight: baked chicken, the leftover squash from Friday night and a piece of the fresh focaccia that came with our CSA this week.
Alan... What is cottage ham?
It's a regional term, the universal name would be a smoked pork shoulder butt. Very Tasty!

A loaf of buttermilk rye bread, cooling after being baked in a 9-inch Pullman pan.
Smells like I imagine heaven does.

Vegetarian Posole and salad
A salad of lettuce, tomatoes, quinoa, olives, scallions, lemon juice and olive oil.
Onion rings.
Baked chicken quarters, leftover squash and a small baked potato. I am stuffed!
Tomorrow: burgers on foccacia bread and air-fryer french fries.
I boiled a big pot of quinoa yesterday so I don't have to cook much during the week. I had some tonight with onions fried in soy sauce. So not onion rings but related.
Meatloaf, Mac and cheese and veggies.
Chicken and wild rice casserole with cranberries, green onions and pecans. Green beans with almonds. Salad of some sort
Another quinoa salad using up the last of my lettuce. I don't plan to buy more for awhile. It is too cold to eat cold foods like that - second day in a row temps where I have been did not get above freezing.
Last night was meat and cabbage pie, with leftovers probably tonight.
Beet and spinach farro.
Keto egg roll in a bowl (pretty much the regular recipe with shredded cabbage filling in for glass noodles).
Quinoa with tomatoes, scallions, guacamole, olive oil and lemon juice.
BLTs!
Salad with lettuce, tomatoes, peppers and bocconcini, pepper dressing, a slice of whole grain buttered bread, an apple and tea. I had enjoyed a takeout perch snack with fries and coleslaw for lunch eaten in the car in the sunshine overlooking Lake Erie. Gorgeous day to grab the sunshine on a spontaneous outing..
A hamburger, made right here in my test kitchen. :D Also a romaine salad with artichoke hearts, onions, garlic, tomatoes and Trader Vic's Javanese dressing.
Navy bean soup and home made bread.
I think olives dipped in guacamole.
