Curried eggplant over rice.
My favourite local butcher makes the most wonderful bacon. Tonight I enjoyed eggs and that bacon on seeds and grains toast and an apple. Lunch was a large mixed salad so I had my veggies covered.
Cauliflower fried rice with smoked pork rib. Yum! Dinner done in 15 minutes!
Tomorrow: baked chicken thighs, baked squash and a baked potato!
Sauteed zucchini from the freezer with diced tomatoes and spaghetti squash.
I have had a can of coconut milk in my pantry for a while so looked for a recipe. Made this curried chicken for supper tonight. https://www.allrecipes.com/recipe/68...entType=Search
I used half the madras curry powder called for as I was not sure how spicy it might be, grape tomatoes halved and a cup of homemade salsa served on steamed brown rice with asparagus spears. Looked just like the photo.
I will definitely make it again but half the recipe as I have enough for at least three more meals. I will find out if it freezes well.

We had a really big salad with left-over chicken and salmon for lunch so it's grilled cheese sandwiches for dinner.
I just gulped down a plate of veggie baked beans, something I haven't eaten in years. They were fantastic, all maple-y and stuff, but I understand why I don't eat them everyday.
Earlier today I ate an avocado. I find them best plain all by themselves.
Butter balsamic glazed vegetables.
Eggplant lasagna pulled out of the freezer from the summer harvest.
Taco soup.

Today’s food - my adjustments to the recipe:
onion instead of garlic
no rosemary
the beans were canned, not dry
cabbage instead of spinach
I browned ground sausage instead of using links

Large salad with boiled eggs and chick peas, orange for dessert.
Big pot of misc. veggie soup with some leftover chicken breast meat. Perfect for today's weather.
Chicken tenders with sambal oelek/marmalade dipping sauce. Lemon pudding for dessert.

A slice of pizza, some tomato veg soup and an orange. A friend dropped off a plate of goodies today so I am sampling too many of these delicious treats.>8)

Fish on Friday...salmon bowl with soy-honey glazed salmon chunks, avocado, ferro and snap peas on a bed of greens.
Crusty bread with whipped butter.
Black bean soup and cornbread.
BBQ ribs and a salad with an orange.
It's "fend for yourself" night with leftovers from the previous 3 nights.
Bamieh -- a Middle Eastern stew of beef, okra, and tomatoes -- for the adults and good ol' blue box mac and cheese for the grandkids. The older one tried some of the meat and liked it but it had a little too much heat for her to eat more.
Are you dropping the food off? I was under the impression you weren't getting together with people outside your household.
My parents and I now pop our trunks from inside the car so we can give each other food and other things, now that surface transmission has been debunked as an infection route.
Sick of cooking so today is dominos.

We've worked into DD's/DSiL's bubble now that grandchild #3 has been born. The kids quarantined and the parents had to be symptom-free when they arrived at the hospital. With a newborn in the house, DD/DSiL (now) have been very strict about who gets to visit (grandparents only; which still is seven people but four of them are not regulars). We actually had the older (toddler) kids at our house last night. So "adults" was just DW and me while mom and dad had the baby to themselves.
