Another storm on its way, so I think I want my bean soup with cornbread tonight.
Today it will be chicken, veggies and Mac and cheese.

That turned into grilled cheese sandwich and lentil (spinach, onion, corn, carrot, garlic, leek) soup, which is steaming away in the IP as I type.

Made bone broth so it will be mushroom barley soup today. Got the bones for the first time from a local farm here. I asked for oxtails, and I got a whole oxtail--that's the first time that happened! It wouldn't fit in the crock pot and I had to take the cleaver to it!
spaghetti tonight: ratatouille and a bit of meat from the freezer. Fresh grated Parm over the top. Easy Peasy.
Getting nachos, cheese and beef from takeout.
Stir fry veggies and regular white rice. Part of my pandemic inventory of rice - when it was rarely seen on the shelves, so I snapped up two bags when it appeared.
Stir fry of broccoli, cauliflower, onion with a sausage and a homemade bun.
Salad of black olives, purple onion, red tomatoes, green lettuce and guacamole and orange cheese. The onion was pungent so I had a butterscotch lollipop afterwards.
Tomorrow: grilled chicken and squash.
Thursday: Split Pea Soup-I have smoked ham hocks defrosting in the fridge.
Put some chicken broth in the cp along with some fresh spinach, what was left in a jar of roasted red peppers, and some leftover rice. Should make for a nice little soup.
That sounds good, happystuff. We are trying our first frozen cauliflower pizza.
14.5 oz can Hunt's No Salt Added Diced Tomatoes (including the liquid) and 15 oz can Wolf Brand Chili With Beans put in a pot together, heated, and used as pasta sauce on spiral pasta.
Notes:
- Wolf Brand "Authentic Texas Recipe" chili is mild. Wolf has medium or hot chili if you prefer.
- When buying chili, don't be fooled by cans that say 'no beans'. What that really means is the beans have been replaced with rolled oats (like the old fashioned Quaker Oats). It doesn't mean your getting more meat.
- If you want to be healthier, you can toss in a handful of blueberries after the sauce is heated. I often do.
- If you want more fiber, cook a small amount of diced cabbage, drain it and mix with the heated sauce before adding to the pasta.
Well, I overcooked it because it was the first time we used the new oven and we couldn't figure out the timer. We couldn't tell the difference and checked the box and apparently the ingredients for the crust are 1. cauliflower 2. brown rice flour 3. Some other kind of flour.
So it wasn't pure cauliflower, but it was gluten free if you wanted that feature, and very good!
Tossed salad with pesto instead of dressing.
Stir fry with brown rice and quinoa... homemade chocolate peanut butter chip cookies.
We love the cauliflower crust pizzas from Costco.
Made pesto ate with pasta. Yesterday I had the craving and picked up two slices of pizza from a local place, margherita and veggie, well I refrained from ordering a whole pizza at least which I considered. That would have been crazy.

I haven't had a pot roast for years and years. Bought one yesterday and placed in the crockpot overnight. Very tasty.
Split Pea Soup. The smoked hamhocks are simmering now.
Tomorrow: Mac n' Cheese (not a box) with chicken and steamed carrots.

Stuffed pork chops with homemade stuffing and peas.
Last night was a zucchini omelet.
The last of the garden pasta from the freezer with bow tie pasta and roasted asparagus, with a slice of homemade bread. It seems like there was a time when asparagus was a luxury out of season, and now it seems like it's cheap and on sale just about year round.
Homemade kale chips following afternoon grazing on pistachio frozen Greek yogurt and hunks of Swiss cheese.
Dry rub chicken breast and roasted Dijon potatoes.
We are still eating leftovers.
Made sloppy joe sweet potatoes last night. Turned out really well.
Plan to have a trout with chermoula sauce (I make it with parsley and cillantro etc.) and rice. Yesterday was chicken tacos with a roast chicken from the store, plus a prepared "greek salad" from Trader Joe's, talk about not cooking.
Took the extra twice-baked, stuffed potatoes out of the freezer and have them. Easy. :)
