Last night was nachos. Tonight is Lasagna Pasta with garlic bread.
Chicken, rice, stuffing and veggies. Came home to an empty fridge and decided to start eating down the freezer and pantry.
I have a ton of squash and zucchini, and I also have onions, garlic, quinoa, and mushrooms. If you were me and wanted to take advantage of those ingredients as well as any other standard pantry items, what would you do?
Saute the mushrooms, squash and zucchini in the garlic and onions and serve over the quinoa.
Take out tonight but not sure where or what.
Veggie bowl. Black beans, sweet potatoes, chopped red bell peppers, corn and farro. Topped w/sliced radishes, cabbage and lime cilantro dressing.
Turkey a la king for a change since it is cooler today.
Baked haddock with sautéed zucchini and cherry tomatoes.
Was given a pork loin last night so had it in the cp cooking. Will probably shred it for bbq sandwiches.

We are eating a lot out of the garden right now so tonight will be kebobs with our peppers, onions and zucchini along with teriyaki pork and pineapple. Will probably saute some fresh green beans with garlic. It was bulk meal day so I also made cabbage roll soup with our cabbage and some ground elk my son gave us.
Fresh sliced strawberries and plain whole milk yogurt. Had a big lunch and wanted something light.
Pork loin and couscous, along with the leftovers from the week. I'm actually having the last of the garlic chicken, as I'm not a fan of pork loin.

Stir fried Japanese eggplant with basil, peppers, and leeks, all from the garden. Over rice with a soy / rice vinegar based sauce.
Marinated feta (I marinated it as per a recipe), over sliced grape tomatoes and red onions. Served with lentil soup.
Last night was Italian Bake casserole and tonight is Beef Noodle casserole. I plan the month's meals the month before so I must have started in the Casserole section of my recipe binder.

Schedules are all over the place tonight so everyone is on their own! I may break down and have some soy ramen.

Picked up those english muffins, as well as some pork roll - pork roll, egg and cheese on an english muffin! I've been craving since the above post. LOL
