Tonight's dinner was butternut creamy sauce over pasta and broccoli.
DH likes SOS, and orders it when it's on the menu. I find it rather gummy and bland.
My mom also loved the frozen Swansons, but they were for special events to be carried into the living room and eaten from tv trays. Think election, Olympics and sports playoffs mainly. We didn't have a tv in the kitchen. Dinnertime was for conversation.
Leftover relish mixed in with leftover cottage cheese. The boss bought a bunch more snacks today so I wasn't that hungry when I got home.
Worked day shift and found myself craving pizza. Stopped at Aldi's on the way home for a few things, so picked up one of their pizzas. (Not frozen!) LOL.
Tomatoes, tarragon, olives, marinated artichokes and nutritional yeast flakes, chopped and mixed into a use up what's on hand salad.
Leftovers from yesterday, smoked turkey breast, mac & cheese, candied yams and white corn.
Navy bean soup, home made bread, tortilla chips.
Tonight is mango chicken, rice and brussel sprouts.
Posole and a grapefruit salad.
Tamales with chili sauce.
Ham and beans soup.
Chicken and broccoli casserole over rice.
We had baked potato bar. Discovered our Instant Pot is THE best way to "bake" potatoes, at least time-wise.
Last night was corn meal mush with tomato sauce and nutritional yeast flakes and for tonight I plan leftover mush fried with garlic and tamari.
We are having filet mignon tonight. It was 20 for a pound but it will be dinner for 2 tonight and another meal for me. Much cheaper than eating it in a restaurant.
I roasted a large turkey breast a few days ago and it is not getting used up as I thought it would (sandwiches, etc.) so tonight I'm making a bowl consisting of turkey, roasted carrot and beet, farro, green beans and a cranberry chutney I'm cooking up this morning.
Made a veggie strata yesterday evening to soak overnight and bake this afternoon with applesauce oatmeal muffins while I walk the dog. Grapes for dessert.
Quinoa, black beans, mushrooms, spinach all topped with chopped fresh tomato.

Shrimp scampi made with edimame fake pasta. (SO was recently diagnosed pre diabetic so we’re exploring low carb alternatives for pasta.)
The edamame pasta was actually pretty good. Dryer than real pasta but good texture and taste. Tomorrow we’ll make theleftover with red sauce.
Whole chicken, cooked with lemon juice, olive oil, garlic, salt and pepper. On a bed of cut up small potatoes, carrots of all colors, and celery root (have not tried celery root before, I like it this way). And I am making broth from the chicken carcass (including the top of celery root). Do I always make broth (uh in the once every 2 or 3 months or something we have a whole chicken), definitely not, but a bit ambitious today.

Venison burgers, fried in the skillet. They were yummy..just patted them out and sprinkled worcestershire sauce, salt and pepper on one side. thanks to my brother in law we should be getting more!!

I like the chickpea pasta - don't know if that would work with your SO's dietary restrictions or not.
Start of the pandemic, everyone stocking up (hoarding) like crazy. Pasta aisle like most aisles of food that will keep, totally empty, completely bare, except boxes of chickpea and lentil pasta. Maybe they are good, I've never had it but that's how much people people are sold on it: "oh never mind, I'll just starve in this here pandemic" ... :laff:
Macaroni with tomato sauce and meatballs with apple.
BLT with avocado on ciabatta bread with garlic aioli instead of mayo. With French onion soup, pre-made from Costco. It comes in a frozen single serve portions. There was two left from about a year ago. Basically, cleaning out the freezer is on my list. The bread, bacon and soup have been in our freezer for awhile
Continuing with my efforts to reduce our carbs for SO's sake I bought some almond flour today. (didn't even know that was a thing until I googled low carb pizza dough...) It's absurdly pricey compared to regular flour ($7.99 for maybe a pound of it) but I found a pizza dough recipe that calls for it so I thought I'd try that tonight. If it turns out good the flour will be worth it for the health benefits. And since we previously made pizza with frozen dough from whole foods I doubt we're actually spending more money making our own from this. The real cost difference is the extra time I will have to spend actually making dough instead of just rolling out a premade frozen dough.

I will cook the rest of the celery before it goes bad with tomato sauce and parmesan cheese.
DH is going to make his tasty polenta with shrimp dish.
