Stir fry garden eggplant and peppers with noodles and a sort of pad thai sauce. I've frozen a few packages of yellow squash and the neighbors are hinting they are over them. I may make one more recipe of squash bread before terminating the plant. I've eaten a lot of squash.
There has been a peach stand set up in a parking area near by with regional peaches that have been works of art. I picked up a large bag yesterday and am debating cobbler or...?
Thursday - take out sandwich night for us. Subway, Jimmy Johns, Jersey Mikes, etc. Nice to have a night where I don't hear those words, "what shall we have for dinner?"

Tonight is going to be barbecued chicken wings. Tomorrow is taco Monday to use up the rest of the turkey burger I bought last week, as well as the last two tomatoes we currently have from neighbor. And Tuesday will be spaghetti with spicy sausage meatballs.

Imam Bayaldi, a Middle Eastern favorite. Stewed eggplant and tomato. Lots of onion, garlic, and olive oil. Served on couscous with fresh squeezed lemon juice on top. Yummmmm.

Imam Bayaldi
The name means the "imam fainted."
As much garlic as you want, cloves crushed (I use a ton)
At least 1 chopped onion (I used two small ones)
Olive oil (the good stuff - I use extra virgin from Greece, that's a lovely green color)
1 large can diced tomatoes, lightly drained (I prefer petite diced) - I added an extra can (regular sized)
1 eggplant, peeled and diced
Salt and pepper to taste
Saute garlic in plenty of olive oil until the aroma rises in a big pot (I use a 6 qt). Add onions. Saute until the onions are soft.
While the garlic and onions are cooking, in a skillet or other pot, fry the eggplant in plenty of oil olive (add more if it gets dry) until soft.
When the garlic/onions are soft, add diced tomatoes. Have pot simmering nicely. When the eggplant is done, add it to tomatoes/onions/garlic. Simmer until eggplant is just about falling apart, 30-45 minutes.
Serve with rice or couscous. I add plenty of fresh ground black pepper and kosher salt.
It tastes even better the next day. You can eat it hot or cold, but I prefer it hot with lemon juice sprinkled on top.
I mostly use chopped garlic out if a jar these days. Much easier.

I like baba ghanouj and pan-fried eggplant slices. Actually, I like most of the eggplant dishes I've had.
I made curried chicken tenders from slices boneless breast meet, put the spices in the chicken bag, shook it up, sloshed it around, placed them on a foil lined baking sheet, baked at 400 for 7 minutes! Done and delicious. Fresh corn on the cob!!! and a salad. Yummy dinner and EASY!
Just threw together a "hearty veggie soup/stew" into the crockpot - zucchini, carrots, celery, potatoes, beans, tomatoes, etc. Somewhat based on a recipe with additions and deletions - LOL. Supposed to be rainy by about dinner time, so should hit the spot.
Polish sausages or brats, chips, fresh veggies… summer fare.
For lunch today I struggled. We didn’t have any leftovers and nothing quick and easy seemed at hand. I ended up turning a can of garbanzo beans into spicy refried garbanzo beans and making some air fried tortilla chips for a weird take on nachos. It actually turned out better than I expected although I don’t know that I will make it again anytime soon.
Okay----I'm like you kids, finding that leftover beans are my typical fare under this Built-Back-New Economy Recession. But yeah---they had 'em on sale, pretty cheap, so I stocked up, so I can EAT at a subsistence level until the regime change. Plus, I'm saving up enough Rubles to electrify my Packard, if the 'gime don't change. Yup. And, as always---Thankk Mee.
