That is a sign of GREAT hosts. I aspire to be the person who can whip up a great meal at the drop of a hat for guests.
When we went to Minneapolis for the weekend for our nephew's wedding, we were going to go out for dinner the next night with my brother and SIL. But, being that it was Jan 2 in Minneapolis, it was snowing and freezing. So last minute we decided to eat at their place. They grabbed a couple of filet mignon from their freezer and put together something similar to what you did (minus the garden-fresh veggies) and it was great and seemingly effortless on their part.
I would have freaked out and suggested pizza--delivered of course.
This is making me think it might be a good idea to have the ingredients for a quick, unexpected guest(s) meal handy. It used to just be pasta, but since we aren't eating that these days, I would like to come up with something else. But, as you say, there's always pizza!

Nice salad, following our main meal at brunch at son's house. He made an asparagus frittata.
Leftover chili and bacon-wrapped jalapeno poppers.
Caesar salad.
