Beans and greens. It's in my rotation and can have some variations. Today was baby grean lima beans with garden swiss chard.
On Wednesdays, DB and I enjoy a mid-work week splurge of a few $5 sushi rolls from Kroger. :D
We had shrimp, mushroom, jalapeño, mozzarella quesadillas.
Just finished making a salad and will add some chicken as protein.
Homemade pizza! Use the sourdough starter once a week, so decided on pizza crust today. I do like pizza.
Mine does not. I have a sourdough starter, so the recipe is:
3 cups of flour (up to 1/4 cup can be whole wheat)
2 cups of starter
1-3 tbls water (if needed - I never use)
2-4 tbls oil (any kind)
1 tsp salt
Just mix all together. Can let rise or not. Can spread on pans and let rise or not. I usually pre-bake my crust before I start putting sauce, cheese, toppings, etc. and then bake the whole thing.
My quick baking soda crust does use milk. I've never tried making it was just water instead of milk. It has a more "biscuit" taste.
Dinner out with our Monday Night dinner group. I had tuna tataki and a spinach salad. Delish! Darn hot here today, so nice not to cook.
Cod cakes and sautéed garden greens. Cod cakes were an experiment which worked out pretty good. I froze several as patties so will see how well they freeze.
Toasted tuna salad sandwiches and fresh fruit salad for lunch.
The last of the corn relish with some chopped lettuce, celery, red & green bell pepper, tomatoes, snow peas, etc. Crunchy salad!

I made something new last night. Super easy 30 minutes dinner. They were called BBQ Bombs. You split Grands biscuits in two. Put one side in a muffin pan. Fill it with cheese and meat with BBQ sauce and then more cheese on top. You put the other half on top and cook for about 15 minutes. We didn't know how you were supposed to eat them so we just used our hands like they were mini hamburgers. Nobody raved about them but everyone thought they were good and wouldn't mind having them again. I call that a win.
Big score! I made a pizza (using milk-free purchased pizza dough) with turkey, tomatoes, homemade tomato sauce, peppers, red onion, and dairy free cheese. It was really good! I’m glad to have found something different for DH who loved it.
Made minestrone for dinner last night for the first time in a while. Homegrown zucchini and tomatoes were in it. I love that soup--it's so packed with nutrients and tastes good, too!! (At least I think so). Mark Hyman says he has it for breakfast every day.

Love soup, catherine! Child actually wants me to make a Korean cold cucumber soup for tonight. LOL.
Most recipes are very similar so doing a google search of "Korean Cold Cucumber Soup" will net you some options. Most of the Korean recipes call for the thinner kinds of cucumbers, but I just slice my big cucumbers to size and use them.
Another recipe is for cucumber salads. Pretty easy and very versatile. I'm going to try this one today:

Chinese-style Raw Vegetable
Chop the vegetable of your choice into 1/2 inch square chunks.
Mix:
2 TBLS soy sauce
1 TBLS vinegar (I'll probably use rice vinegar)
1 tsp sugar
1 tsp sesame oil
Pour over the veggies. Chill if you like. Especially good on cabbage chunks.
Looks great, happystuff! I do have most of those ingredients for the recipe in the link in my pantry already. I have evrrything I need for your raw vegetable dressing, so maybe I'll try that first! This year I tried growing both Mackelmore and those little mini-cucumbers, so I think those will do the trick!
Steak salad tonight. Not my first choice but since DH is cooking I can't complain.
When I visited Concord, NH with my DD recently, we went to a store that actually sold forfar bridies from the same Scottish shop we used to go to in NJ, which has since moved down to FL!! So I think we're going to have that with HP sauce and chips!
Viking House? Seems like it must be... there's not that many exotic food places on Main St. in Concord! It's where I buy my golden syrup. Waay cheaper than I can get it at a local supermarket.
Tonight's dinner will be HM pizza with bruchetta, mozzarella, fresh basil and sliced tomatoes. DH started a sponge for the dough. We'll have it with HM pear sorbet as I got 2 pears for .77 off the bruised, etc. rack at the supermarket. Just enough for us.
I drive through Concord when I visit my son so I will have to check it out!
Dinner weirdness..made mashed potatoes with Madras Curry seasoning and a summer salad with arugula, apples, red grapes and some cubed melon--a bit of Feta on top. Odd but good...
Not sure what dinner will be tonight? We have LOTS of veggies to use up, so maybe salad. We have people coming to measure for windows so whatever it is will have to sit a while. A big salad? Still lettuce from the farm and the garden in the fridge....
We are celebrating our first ripened tomatoes by having BLTs tonight.
So, I actually made it and then did a taste test: Your raw veggie marinade vs DH's favorite sauce, Bachan's Japanese Barbeque Sauce. He uses it on EVERYTHING--it's his version of ketchup. Frankly, I don't like his sauce. It's too pungent and salty.
So your marinade was the clear winner as far as I'm concerned... it's flavorful without being overwhelming. I used it on my homegrown cucumber. I haven't had a chance to try it on DH yet, but I will! (Last night he brought home pizza unexpectedly).
I learned that cucumber recipe years ago when I took a Chinese cooking class. Our instructor cut cucumbers into thin matchstick pieces and used that same simple dressing. I haven’t made it in a long time so thanks for the reminder. we have a bunch of cucumbers, sitting on the counter here.
Went to a Farmers Market this morning. Got some REALLY expensive gourmet type burgers. Dh had his whole (they are huge!) I split mine into two and it was great! Also have leftovers to go along. Very good.
Lasts night was eggplant "pizza" - round of eggplant with slice of tomato and mozzerella cheese. Turned out well.
Planning - so far- on portabella mushroom burger tonight.
We are going swimming at the state park and then out for seafood, son and granddaughters, so it should be great.
