    Most recipes are very similar so doing a google search of "Korean Cold Cucumber Soup" will net you some options. Most of the Korean recipes call for the thinner kinds of cucumbers, but I just slice my big cucumbers to size and use them.

    Another recipe is for cucumber salads. Pretty easy and very versatile. I'm going to try this one today:

    Edited to add: Also found this recipe in my own binder. Can't remember if I've ever made it or not as I save "potential recipes". LOL

    Chinese-style Raw Vegetable

    Chop the vegetable of your choice into 1/2 inch square chunks.
    Mix:
    2 TBLS soy sauce
    1 TBLS vinegar (I'll probably use rice vinegar)
    1 tsp sugar
    1 tsp sesame oil

    Pour over the veggies. Chill if you like. Especially good on cabbage chunks.

    Looks great, happystuff! I do have most of those ingredients for the recipe in the link in my pantry already. I have evrrything I need for your raw vegetable dressing, so maybe I'll try that first! This year I tried growing both Mackelmore and those little mini-cucumbers, so I think those will do the trick!

    Steak salad tonight. Not my first choice but since DH is cooking I can't complain.
    My therapist told me the way to achieve true inner peace is to finish what I start. So far today, I have finished two bags of M&Ms and a chocolate cake. I feel better already!

    When I visited Concord, NH with my DD recently, we went to a store that actually sold forfar bridies from the same Scottish shop we used to go to in NJ, which has since moved down to FL!! So I think we're going to have that with HP sauce and chips!

    Viking House? Seems like it must be... there's not that many exotic food places on Main St. in Concord! It's where I buy my golden syrup. Waay cheaper than I can get it at a local supermarket.

    Tonight's dinner will be HM pizza with bruchetta, mozzarella, fresh basil and sliced tomatoes. DH started a sponge for the dough. We'll have it with HM pear sorbet as I got 2 pears for .77 off the bruised, etc. rack at the supermarket. Just enough for us.

    It's on the main street, and it's a cute little gift shop, actually, but there's a fridge in the middle of the store where the bridies are. It is a cute town. We ate at the Mexican place (can't remember the name).

    Dinner weirdness..made mashed potatoes with Madras Curry seasoning and a summer salad with arugula, apples, red grapes and some cubed melon--a bit of Feta on top. Odd but good...

    Not sure what dinner will be tonight? We have LOTS of veggies to use up, so maybe salad. We have people coming to measure for windows so whatever it is will have to sit a while. A big salad? Still lettuce from the farm and the garden in the fridge....
