    I remember those noodles made from mushrooms. Gosh it’s been three years since I thought about them. I chased him down at Asian food stores years ago because they were very low in calories.

    I should go find some one of these days and try them again. They were —OK,. Kind of like Steve says, Useful in someways but not fooling anyone.

    I've given up on most substitutes, though I like shredded cabbage. I try to limit them, pre-cook them so they're a resistant starch, alternate with rice noodles or bean threads... A life without noodles is a pale imitation, at best.

    I think tomorrow's dinner will be hamburger and a huge salad.

    tonight is going to be chicken quesadillas, using up the last of the free cooked roast chicken from the grocery store. And it was a small chicken. Just 3 lbs or so, but we still managed to get three meals for two of us out of it!

    I made pea shoot pesto with pistacios, pecorino-reggiano and EVOO. Cooked up some fresh pasta, sauted some garden pea pods and grilled some salmon.

    YUM!

    I have not cooked since my son left. Last night a friend came over and we ordered domino’s pasta and it was delicious. For 20 they delivered, including a 4 tip. We sat outside and drank wine)

    Big green salad (CSA greens) and a grilled chicken burger. I bought Brioche rolls at Costco for the first time-they are OK.
