Last night was leftovers. Tonight is barbecue chicken with rice.
Well, I googled "Disney Ratatouille recipe" and there were a number of options. I settled on the closest to this one: (Start at 02:20)

I really like taking all the scraps from the narrowly sliced vegetables and making a sauce out of them, but I did add some tomato paste+sugar because I happened to have an opened can in the fridge. I also used thinly sliced red bell peppers in addition to the eggplant, zucchini, and yellow squash.
I think that as much dressing as you can put on before you put it in the oven is better. I still felt it needed a little more salt and herbs, even though I had minced quite a bit of basil, rosemary, thyme, and parsley from my garden. I'd double up on the basil. One of my guests commented on how good the basil was and I felt it could have used more.
My neighbor with Crohn's disease was thrilled that she had an easily digestible thing to eat. It was a little labor intensive, but I enjoyed the process.

The blackberries have come on like crazy. We haven't seen them like this in... well, never. We have been going out every morning and picking before it gets too hot and then sealing them in 4 cup bags. I have already made jam several times and tonight I used some of that to make a blackberry/ginger/hoisin sauce over country ribs. Gotta say... with a glass of Pinot they were amazing.
DH grilled some salmon so will make a bowl with lettuce greens, cukes, red bell peppers and yogurt dill dressing.
Last night we had turkey tips and a salad. I love the turkey tips at the Ninety-nine Restaurant; they are marinated with a lot of rosemary and they are so delicious. DH nailed it!
