    Trying once again to eat healthier, so last night was eggplant cooked in chopped tomatoes with some olive oil and curry, over quinoa.
    Tonight will be shrimp, but haven't figured out the details.

    ETA: Last night's dinner was delicious, BTW.

    Coconut braised beef tonight. Yesterday was local-restaurant-takeout night -- a Rachel sandwich for DW and a Cubano (sans bread) for me.

    Coconut braised beef sounds yummy. Instant Pot hamburgers sound intriguing.
