    I like lentils, but don't consider them healthier than other whole foods I eat--maybe less so, as they're not a complete protein. I particularly like them in Ethiopian and Indian food, but usually just make soup.

    I made a salad last night, but added some leftover quinoa, feta, & avocado in addition to my usual lettuce, tomatoes, cucumber, celery, green olives & black olives. It was really good!

    I think that lentils have health benefits that other foods do not, and particularly for my husband, who eats too much salt and too few vegetables and too many preservatives and too few lean meats and too many processed foods, lentils are a nice option.

    As for me, I love lentils--I think they are satisfying and versatile and a good source of fiber.

    Leftover vegetable stir-fry with grapes. Going to make some applesauce and carrot minimuffins for a serving of starch.

    Lentils are one of the top if not the top foods in antioxidants. But they are boring, yep not their fault but they are b-o-r-i-n-g. Still my bf eats whatever I make and sometimes that's lentil soup and sometimes he makes lentil soup (sometimes I add a small amount of lamb or beef, to the horror of vegans everywhere).

    As for quinoa, avocado and feta I make this often, but when more stuff is in season. Tomatoes now are sorry winter tomatoes etc..

    Probably an eggplant variation on loaded potato skins. I meant to make it for a socially-distanced outdoor gathering this weekend but we moved up the time of that event to accommodate an ice/snow storm (which, it turns out, skipped us) and I didn't have time to make it until now. DW is visiting her mom at the LTC facility.

    Tasty steak bites and mushrooms with balsamic vinegar, baked potatoes and veggies. Happy to have leftovers!
