Another variation Happystuff …
I combined a few recipes and added my own touches too based on what I had on hand. I cooked the cut pepper shells (used 2 medium size peppers & 1small pepper) 5 minutes in boiling water before filling so it did not have to cook as long. The recipes said to use either tomato sauce or canned tomatoes. I used stewed canned tomatoes (about 3/4 cup), brown rice & quinoa mix (1cup) instead of plain rice, 1 small onion and used ground sirloin (1/2 pound). Garlic, salt & pepper added. Cooked all together then stuffed into cooked pepper shells and topped with shredded cheese. Baked 15 minutes at 350 degrees and amped up to 400 to brown top).
Recipe for 4 servings. Thought might be bland so put siracha sauce on table but was tasty without. Was going to freeze a few but DH vetoed saying he would eat again in a few days. It is not something I would want often but is a good way to use up extra peppers.
