    Is DH not picky about food? I never once heard my father complain about anything mom made. He didn’t cook and seemed genuinely happy with everything she served. Even really dreadful stuff like canned beef hash on toasted store brand Wonder bread with canned cheese sauce. I try not to be terribly picky since anyone cooking for me so I don’t have to is a great thing but I do have my limits.

    DH is picky about several things but this is a soup he will eat.

    Tonight is chicken piccata and Caprese salad. Old lady neighbor’s tomatoes are abundant and super delicious this year. Today she asked if we were tired of them and I responded ‘tomato season is 2-3 months a year. There’s no such thing as too many’. We’ll take some to nearby friend Sunday and I’ll dehydrate some. And we’ll eat the rest. None will go to waste.

    Even the squirrels love her tomatoes. Yesterday I glanced out the window while I was working and one of them had stolen a ginormous green tomato, brought it to our yard, and sat on top of the fence and ate 2/3 of it.

    JP1, when I have extra tomatoes, I just cook them up with lots and lots of basil and olive oil and oregano and freeze the batches and stock the freezer with them. We eat it over pasta or I use it as a base in vegetable soup.

    Our big tomato crop just started rolling in. DH is distributing tomatoes to neighbors. Last year I froze many bags of tomatoes and there’s still several of those left. I don’t know from year to year if it will be strong tomato crop.

    That is a great idea. We also have a basil plant that is growing like a weed right now. And we always make homemade pasta sauce so we would definitely use whatever we froze.

    I also use it as a layer over ziti with ricotta cheese mixed with eggs and parmesan on top.
