Thread: Alpha-Gal syndrome

    Our household is now a couple weeks into DH’s new Alpha-gal diet.

    some findings:

    * Indeed, most all fake cheeses are nasty things. The tofu sour cream isn’t awful, it’s just its own thing. It doesn’t taste like sour cream.

    * I now read labels assiduously and I’m surprised at how many commercial bread products contain milk. I would say 80% contain milk.

    * DH is losing weight too fast, I don’t like it.

    * all commercial baked goods use milk.tomorrow I’ll have a big baking day where I can make several baked desserts and freeze them. Brownies, muffins, lemon cake are on the agenda. Any recipes that call for milk will not be a problem because I can use soy milk.

    * so last week DH met Swiss relatives in the city of St. Louis and they went out to restaurants. The first restaurant was fine, he had grilled chicken breast. The next morning he ate at a restaurant and explained about Alpha gal. The waiter assured him he knew about Alpha gal and what they served to him would be fine. DH ordered scrambled eggs and toast. On the way home, he felt ill, his throat was closing up, so he went to the hospital.

    No bueno. we think the eggs had milk in them. or I suppose it’s possible the eggs were cooked on top of a griddle that also cooked pork sausage or beef patties.

    * Before DH’s diagnosis he felt sick and was dropping weight so I told him to go downtown to the ice cream shop and eat full fat ice cream. He did that for a few days in a row. Eek! That was not a good idea since it was just keeping him sick.

    Thanks. It is all kinda interesting.

    so I’m trying to figure out what *iS* safe for him to eat in a restaurant. In the past when he went to restaurants, he liked ordering fish but restaurants pile butter onto everything.

    he also likes ordering lasagna, but of course that is completely out and even if I could figure out a version with turkey I think it would be pretty awful because lasagna normally involves three cheeses.

    I’m going to have to up my game in cooking egg dishes and DH is going to have to learn to like quiche and quiche like dishes.

    My quiches probably have too much cheese (I love them cheese-y!). Maybe a frittata type thing with eggs and veggies and - is turkey bacon allowed?

    yes, we have turkey bacon. We also have chicken sausage.


    I forgot quiche uses a lot of cheese. we have a couple packets of shredded soy cheese, but I don’t know how it would work in a quiche.

    This delicious dairy-free spinach quiche is amazingly flavorful and creamy without any cheese, milk or meat. The best part? It can be served for breakfast, brunch or dinner.

    Ingredients
    1x
    2x
    3x
    ▢1 frozen 9-inch pie crust (gluten-free, if needed)
    ▢1 teaspoon olive or avocado oil
    ▢1 yellow onion, chopped
    ▢2 cloves of garlic, minced
    ▢1 cup chopped red, yellow or orange bell pepper
    ▢2 teaspoons dried Italian seasoning
    ▢8-10 oz frozen chopped spinach, thawed and drained*
    ▢½ teaspoon sea salt, to taste
    ▢¼ teaspoon freshly ground black pepper, to taste
    ▢3 large eggs
    ▢⅓ cup egg whites, or 3 additional eggs
    ▢⅔ cup unsweetened almond milk, or other non-dairy milk
    ▢2 Tablespoons nutritional yeast
    ▢fresh chopped thyme, for garnish
    Instructions
    Preheat oven to 400°F.
    All oil to a medium skillet over medium-high. Add onion, garlic, bell pepper and cook until onion is translucent, about 6-7 minutes. Sprinkle salt and pepper on veggies while they cook. Set aside to cool.
    While the veggies cook, make sure thawed spinach is as dry as possible by squeezing out all of the water. I like wrapping the spinach in a couple paper towels while squeezing to help absorb some of the liquid.
    In a small bowl, whisk together eggs, egg whites, milk, Italian seasoning and nutritional yeast. Scatter veggie mixture and chopped spinach on the bottom of prepared crust.
    Pour egg mixture over top and push under any ingredients not covered by the egg mixture to prevent burning. Bake uncovered until set and golden brown around edges, about 45 minutes. Let quiche rest at room temperature for 10 minutes, then cut into slices, top with fresh thyme and serve.
    Store leftovers in the fridge for up to 5 days. Reheat in the oven or toaster oven.

    Notes
    If you don’t have frozen spinach on hand, you can use fresh spinach. I recommend using 3 big handfuls (about 3 ounces) out of a 5 ounce bag of pre-washed, fresh spinach, roughly chopped. You’ll wan to cook the chopped spinach with the onions and bell pepper, just add it into the skillet when you have about 1 minute left of cook time. Saute until spinach has wilted.

    That quiche sounds good and we do have frozen spinach on hand because I’m finishing up a batch from the garden, and then I have a purchase package. I use frozen spinach whenever able to toss in a green veg.

    Sounds like a real challenge for former meat eaters. Are chicken and fish OK?

    Chicken and fish are fine. It’s only products from mammals that are not OK. so not only beef and pork, goat. Raccoon, squirrel, are not ok.

    Kind of puts a damper on our an annual attendance at “the beast feast” at Stone Hill winery where local hunters bring in their kill and the chefs in the kitchen cook them up into a variety of excellent dishes.

    but the Beast Feast will have wild turkey, pheasant, and a couple of varieties of fish so we can still go.
