    Made something new last night. Garlic parmesan cheeseburger bombs. So filling that two was almost too much.

    Making banana nut pancakes for lunch. DH loves pancakes. Me, not so much. I usually tell him to order when out. I don’t really like them or making them. Once in a blue moon ….

    I've never been a fan of pancakes either, although I do like waffles once in awhile. DH sometimes makes pancakes that I really love though. He uses a flour that is a corn/wheat mix, I believe the brand is Martha White, and he adds blueberries. They are very light and crispy, and not heavy and doughy like most pancakes.

    Have an egg-less pancake recipe that we would always use for camping. Used cornmeal and flour, and always added something (chocolate chips, blueberries, etc.). Tasted good and filled the kids up.

    Got some boneless, skinless chicken thighs, corn on the cob and cauliflower at the store yesterday. May cook all that up for tonight.

    Eggplant zucchini casserole and salad. Most of it from the garden since I can't grow capers and olives.
