Mmm... jambalaya! I'd love it, but DH doesn't like spicy. So we're having leftover boiled hamburger meat, otherwise known as mince. I'm feeling something non-meat, though, like an egg dish of some kind--fajita or Chinese egg and tomato.. I'm eating way too much meat these days.

20201014_175740.jpgSince I pulled up the last of my tomato plants today, we are having green tomato tart. It has a masa crust.

My therapist told me the way to achieve true inner peace is to finish what I start. So far today, I have finished two bags of M&Ms and a chocolate cake. I feel better already!

Kay, I wish I had seen that picture a month ago--that is lovely, and would have been good with all the green tomatoes we had this year.

That green tomato tart is wonderful! We have a garden full of green tomatoes that I suppose will not turn red now that cool weather has hit. I just sliced up a crockpot full of red tomatoes to make into tomato soup.

If you haven't had frost yet (or they have not hit the tomatoes), you can wrap the tomatoes in newspaper in a single layers in a cool place. We do this in our basement. I have had tomatoes in other years into November. I usually bring them up when they are close to being ripe and let them sit on the counter. YLMV

Tuesday I baked up a huge spaghetti squash and 2 butternuts.
    1. Ratatouille and chicken sausage from the freezer over "spaghetti" and that yielded 2 lunches for hubster.
    2. Butternut squash, roasted potatoes and pulled pork from the freezer with hubsters Bourbon BBQ sauce!
    3. Butternut squash (the end), pulled pork on Grilled Texas Toast (I bought a loaf at the store this morning just to try it out!

I am thawing a small brisket and hubster will smoke it this weekend. I've got some summer squash, a red pepper to saute and eat alongside the brisket. Another brisket meal will include steamed broccoli with grated pecorino over it.

Being extremely lazy today - sausage and left-over couscous & broccoli.
