    Tonight's just gonna be three cheese tortellini with homemade red sauce. After the stress of last night plus having to get up for a 7 am training call this morning* I just don't have the energy to do anything more fancy.

    *that I volunteered for and was actually really worthwhile. If anyone's interested in hearing about the current legal environment surrounding consumer protection laws that affect collection agencies just ask, I can tell you all about it...

    DH made a fantastic pan-fried chicken thigh dinner from leftovers from the weekend deboning class. It was accompanied by roasted diced potatoes and wilted baby spinach.

    Lunch is takeout from outback because it’s my DIL’s birthday. It’s also going to be our last nice day before winter. It will be 73.

    Last night we had grilled cheese sandwiches and tomato soup. The bread was Sara Lee Artisan ( the closest my husband will eat...) Assiago cheese slices and munster. It was yummy.

    Too many little plastic bags of chicken backs and necks and other parts in the freezer -- time to make chicken soup! Gotta scrounge around the fridge to see what else will go into this batch.
