Just finished making a "curried chicken couscous casserole" for the first time. I just felt like a curried dish.

Funny -- you don't look like a curried dish! <ba-dum> I'm here all week. Tip your wait staff!
Tonight's dinner is the leftover chicken soup that was made from leftovers. Tomorrow (NYE) we're grazing on snacks and finger foods that have been around the house for a while. No special plans but to stay in and warm and watch the ball go down if we remember to switch on the TV.

Last week while watching TV on the treadmill, I heard of a new-to-me ingredient called Nduja. Its a sausage spread from Calabria Italy. Filed that away in my brain. Then over the weekend, in my car I heard a Splendid Table show with a guest that mentioned a vegetarian nduja from her book Umami Bomb. So I made that today, and used that as a pizza base in lieu of tomato sauce, and I could have sworn I was eating a sausage pizza. My husband is vegetarian but I am not, so it was good to be able to make us something that made us both happy (I usually put sausage on just one half of the pizza). Its sundried tomatoes. olives and lots of spices that are used in sausage. Spicy and delicious.
Tomorrow/soon I'm going to experiment with a bacon lardon recipe that was also mentioned. I have yet to make a vegetarian bacon recipe that I'm happy with, and is easy to make. I did a tofu one that was way too much work for this lazy cook. This fake bacon was used in a black eye pea recipe for New Years.
I made rolls last night for the sliced ham to go with the split pea soup. They were WONDERFUL! I didn't start until after 3pm and they were ready by 6! Love the bread machine!
Ran out this morning and picked up a couple of different hors d'oeuvres. We only work 1/2 a shift tonight so will be home to enjoy them.

Tried to order Chinese food for today - day or evening but they are sold out until after 8pm. That is too late for me.
Plan B is cranberry cheese on toast, https://www.allrecipes.com/recipe/21...rk-tenderloin/ apple-glazed pork tenderloin with roast potatoes, freezer asparagus and fresh cherry tomatoes with mango custard for dessert. Sparkling cranberry-apple cider is my beverage of choice for New Year's Eve.
My entertainment is a live online Metopera New Year's Eve concert.
Perfect way to end on a high note and a fresh start to what I hope and pray will be a positive 2021 for all.

Broiled seasoned chicken wings, layered taco dip and chips.
Peas with grated cheddar and some slices of Swiss cheese since it's New Year's Eve and I love cheese.
Oh, Razz, I hear you. When I first got the machine I made whole wheat bread and ate it every morning....not good for me. I use it to make the Christmas sticky buns and then it sits in the cupboard. My husband who never eats much bread ate 3 of the buns! He plans to eat more! I now need to see if they freeze well.
