I made a pot of beans on Monday, so that has been the mainstay so far this week. The OT at work is kicking my butt, so I haven't really cooked anything else so far.

I bought a smoked duck for $17 at the meat market in Herman. Boy is it fatty. So much fat! I’m throwing tons of that fatty skin away. We sliced off some of that meat and then I’m putting the rest of the bones into a slow cooker or I’ll cook off any usable meat. I anticipate that the fat will float to the top when it cools. And I can pull off all that fat.

Hmm, duck fat is supposed to be tasty though. So if you wanted it could be saved to cook potatoes or something in (though not sure it's still good after hours in a slow cooker). Yea I haven't liked duck the few times I have had it, but I've only made it myself a couple times and was like "meh". Someday I'll have to try it at a French (or Chinese) restaurant and see if it's any better.

Today for lunch I tried a new recipe and it was DELICIOUS and EASY! Sausage and peppers in one pan. Put on (scooped out) pretzel buns. Leftovers will be added to spaghetti sauce to put over over pasta (or spaghetti squash?). The seasonings were great. I modified using 2 huge peppers, added mushrooms and decreased olive oil to 2T.

Oh Iris, this makes me cry! And not in the good way. Duck fat is THE BEST. I use it for all things roasted, particularly potatoes and root vegetables.I’m throwing tons of that fatty skin away.
