Meatloaf and rice, veggies. I eat my big meal at noon and have a snack at night.

I want to get in that habit. I think that's a healthier way to eat--and works better with my body clock (who wants to do a bunch of cooking and cleaning at 8pm??)

Sauteed celery. This is the last recipe I am trying from the 5 ingredient keto book. Today I checked out Keto-Green 16. It is based on 16 days of recipes (not 16 ingredients in each recipe, thankfully).

Meatballs, baked potato and carrots with raisin English muffin for dessert.

Yesterday I asked DH if he could maybe make something with lobster meat (we had in freezer), pasta, spinach, basil and grape tomatoes. He could and he did and it was wonderful! Ate the leftovers tonight.

The brown rice is staying quite warm in the Instant Pot, while Canal House lentils are simmering on the stove top. Will have a side dish of baked butternut squash (leftover from last night, microwaved for the encore).

I am hungry about noon and not very hungry at night. This works great for me and I don’t go to bed full. At 5 I feed the dog, get my snack and watch the news.

Frozen burrito w/sour cream and salsa. I got home from a fab weekend with DD and had to jump right into a full afternoon/evening of interviews, so I made it light and easy.

Yesterday made spaghetti from leftover sausage and peppers (mentioned earlier), added marinara sauce and put over spaghetti noodles. EXCELLENT! Bet leftovers would be good in lasagna too??? Nice to have a recipe that can be morphed into different things and taste wonderful each time!!
