    DH and I have a new favorite once-a-week meal. It started with a box of Costco's Lentil Madras packets. We tried a packet and liked it. We made basmati rice to go with it. The next week we decided to sauté Bella mushrooms and then add the lentil packet to it. it was great. The next week we decided to add a can of diced tomatoes to the lentil packet and mushrooms with rice. It was fantastic.

    Last night we cooked chunks of hot Italian sausage and added that to the lentils, mushrooms, and diced tomatoes and had it with the rice. We have pretty much perfected the recipe at this point. It's easy, fast, tasty and pretty healthy (high sodium in the lentil packet, but we use one packet for the two of us and we usually have a serving or so left over). And you can tailor it in so many ways.

    About 5 or 6 years before I retired we added a cafeteria in my workplace with a real chef planning and preparing meals for breakfast, lunch and special events. I oversaw that operation and pretty soon became enthralled with flavors and pairings a real chef brings to cooking, so I started practicing at home. That led to me making dinner every night and then after retirement, my wife handed the keys to the kitchen over to me full time. I don't think she's actually touched a pot, pan or stove in the last 4 years.

    It's too bad I actually suck at sauces, pastries or any other type of breads but I can knock out a plain but serviceable meal about as well as anyone I guess. I'm excited about today because it's the last day of her school year as well as the last day of her working life. We've got a new deal going forward, I'll continue to do the cooking but she's responsible for the cleaning up afterwards. We'll see how that goes.

    Lunch is our main meal of the day. Dinner is whatever.... no cooking involved. Works well!

    Congratulations to you and your wife, Alan!

    We splurged at a favorite seafood restaurant yesterday afternoon. I was considering a lobster roll, but decided to be a bit more adventurous for a change and got a salmon BLT. It was one of the best sandwiches I've ever had! It was on sourdough, and there was some arugula in with the lettuce and it was amazing!

    I made a lasagna the other night and had leftover noodles. Tonight I decided to cut them up and deep fry them and made a dip of spicy chicken sausage, spaghetti sauce and the rest of the ricotta cheese. It wasn't bad but I don't know that I will make it again. The fried lasagna noodle pieces were very much like chinese fried noodles so maybe next time we'll just do that and eat them with spicy mustard and plum sauce.

    Busy night after work - mowing lawns, grocery store, etc.

    Bowl of Cheerios w/Almond milk. Not to hungry after quick trip to the store - so I had fresh cut watermelon plus two slices of Dave's Killer bread toasted with a thick spread of guacamole, thick slice tomato and fresh ground pepper - yum, so good. Simple dinner, but quick and refreshing on a warm evening.
