    I diced red potatoes, a little oil, rosemary, garlic and onion...microwave 5 min. rest 10 min. microwave 5 min. Done and tasty.

    I didn't feel like cooking but ended up putting a little more effort into the meal than anticipated - but turned out to be a very rare treat: got Grands flaky biscuits, split each one in half and put swiss cheese, ham and spinach in some then mozzerella, turkey pepperoni and spinach in others. Turned out very nicely for - again - a rare treat.

    Grill is all cleaned up. Tonight will be grilled buffalo sauce chicken wings and a nice tomato salad with more of the delicious tomatoes from our neighbor.

    Eggplant and zucchini with pasta and low fat feta. From the NYT cookbook. I actually subscribed to their cooking feature for some new uses for garden veggies. I'll probably discontinue after a month or two.

    I'm such a fan of minestrone these days. It's such an easy way to use summer vegetables. I made a batch last night and gave some to my daughter and some to my neighbor. 30 minutes from heating up the oil to eating.

    Our county fair started this past week, so spent the day at the fair yesterday and had fair food for dinner. Headed there again today with the kids, so will probably be the same. Fun time!

    We are so bummed that this week is our county fair, and we both are busy with big things and can’t attend. But next year!

    I even have the oremium list, a book of 150 pages, sitting right here by my place mat. We are studying the categories to see what we will enter next year.
