    I got an air fryer last week but never opened it due to being occupied with having Covid. Just opened it tonight and used it to reheat leftover pizza. It was fast and good.

    I finally figured out that dried beans cook best in a crockpot at this high altitude. So I have a crockpot full of pinto beans to go with green chile chicken stacked enchiladas and cilantro rice later. Citrus and avocado salad - one more time.

    That sounds great! We had chicken with basmati rice the other night and I repurposed the extra rice and had rice and black beans (with cilantro) for lunch yesterday!

    Last night we had baked spaghetti squash with olive oil, tomatoes, olives and feta cheese. It was so good!

    Just popped brown rice and lentil casserole into the oven. Rest of the family should only have to reheat.

    Trying a new recipe tonight - a rice, chicken, broccoli, cream of chicken soup casserole thing. Not one for canned cream-based soups, but I tend to make new recipes according to the recipe the first time though. If it turns out okay, I'll figure out some alternatives to the canned soup. LOL

    A rice and bean burrito from the freezer. And packaged pesto flavored riced cauliflower. The cauliflower a trial and edible, but will not repeat
