    The faux beef stroganoff was decent. This ostrich meat tastes like beef.

    Dh has decided - once again - to get serious about his pre-diabetic status. He said he wanted to go vegetarian. I reminded him that his diet should not primarily be what he doesn't eat, but what he does eat. I'm looking into more vegetarian meals, though. Tonight's dinner will probably be salad and homemade pizza with lots of veggie toppings. LOL.

    Husband grilled steaks. The weather was 30 degrees, but had gotten up to 40! He's already cleared the grill last week in bits of time, so only had to take it out of its alcove. Whaich had been snowed in. Nice treat!!

    okay----this evening i stopped at one o' the 3 Asian restaurants up on the "strip", and ordered up a huge $10 plate o' vegetable fried rice and a Fanta Orange. I wasn't particularly ravenous, but i ate the whole thing; it was that good.

    So we've discovered a great light dinner. You heat up chicken broth to boiling and put in udon or sobi noodles and frozen dumplings until noodles are cooked and dumplings are warm all the way through. Season with soy sauce. You can do green onions as a garnish. That's what we had tonight.

    DH made his tasty stacked chicken enchiladas. Made with smoked chicken meat, jack cheese, corn tortillas and green sauce from last summer's Pueblo chiles. Side of cilantro lime rice and grapefruit avocado salad.

    Katherin and Pinky to both have husbands who are good cooks.

    DH here is a “plain” cook but he never makes anything like you two mention. That would be nice!
