A big salad with last night's grilled chicken! Yummy!
shrimp and red bell pepper served over chickpea spaghetti with pesto.
Tonight: a Vietnamese beef and "pumpkin" soup made with two beef shanks that toook forever to get tender and most of a butternut squash that's been hanging around longer than I'd like.
Vegetarian chili with veggie and hummus dip - carrots, cauliflower and peppers . Add a Granny Smith apple and some Limburger cheese.
A couple enchiladas and celery microwaved with cheese on it.

Rainy weather here so I'm prepping a stew in the crockpot.
Hellman's mayo recipe- Chicken thighs parmesan- 1/2 cup Duke's mayo, 1/4 cup parmesan, 4 tsp. Italian bread crumbs ( I crunched up croutons) Oven preheated to 425, mix mayo and parmesan, spread on thighs ( one had skin, one not), put on breadcrumbs- bake about 20 -25 minutes
It was very tasty after a day working in the yard!
You realize, of course, that the dish turned out totally different because you used Duke's mayo in a Hellman's recipe, right? :laff:
Seriously, if I could find Duke's up here, I'd love to try it. People talk about it like it's legendary. On the other hand, I'm enough of a mayonnaise Philistine to be fine with Aldi's Hellman's knockoff. Maybe Duke's would change that.
I have a niece down in Missouri who wants to visit us. I may ask her to bring a few jars up with her.

Hmm. Niece lives near Kansas City, MO. <looks at Duke's where-to-find map> Ah, figured it out. Apparently I can buy it here in the Twin Cities if I'm willing to walk into a Walmart. But niece can buy it at her local Hy-Vee, Price Chopper, or Walmart (won't be Walmart for her either). Looks like around St. Louis you'd go to Schnuck's. But it doesn't sound like Duke's is on your grocery list. :)
I kept seeing rave reviews of Duke's. Ordered some from Fresh. It's not at all bad, but I still prefer Best Foods (Hellman's)
Well, DH's nickname is Dukes, but I still can't see using anything but Hellman's. I don't believe Duke's has made it to the Mid-Atlantic/New England area.
I chuckle at the preference for one make of mayo. I have just discovered that ketchup/catsup can taste positively awful if it is not Heinz. I bought a chain brand and it is so bad that I will discard it. I even tried using it as a flavouring in a tomato sauce to use it up and scrapped the sauce instead.
Interrupting this mayo discussion to say we are having deconstructed cabbage rolls tonight.
I'm having lamb chops, you can now proceed to food envy (well if your not vegetarian) and I don't know salad or veggies or something TBD. I don't have lamb chops often either, and they weren't cheap. Last night I made red clam chowder.
Mayo is mostly gross, I don't keep it on hand. But once in a while I crave it, so I go somewhere I can get a tuna melt and potato salad or coleslaw with a bunch of mayo, and craving is taken care of.
Defrosting honey squash and some wieners to enjoy with a fresh salad and an orange.
My dinner tonight was an impromptu tuna salad (with Hellman's mayo, onion, some dried celery flakes, and celery salt) served on cucumber rounds. DW's dinner was the original plan; a hot dish of chicken breasts in a creamy southwestern sauce into which she inadvertently dumped a can of refried beans, pushing it way past my allowed carbohydrate intake. :(
Tonight was a big chef salad with grilled chicken thighs done Thursday night.
I'm working past dinnertime this week giving vaccines. So I just took 2 turkey meatloaves out of the oven. Add veggies each night and we're good for 4 nights! I have brussel sprouts, carrots and a serving of broccoli so fresh roasted veggies each night!
Friday my sister is coming to town so I only work a 5h shift in the morning. Fresh dinner on Friday night:cool:
Left over Middle Eastern food from last night. Eaten while soaking in a hot bath while recovering from diving today
I have the makings for stir fried rice tonight. Should be enough for leftovers as well.

I'm coming down with a cold..thank goodness I made beef bone broth a couple of days ago and chicken broth yesterday. I'll be sipping on that.
Quick Chicken Ramen Noodle Stir fry.... gets even better as it is reheated.

Here comes a short winter blast so sheet pan chicken thighs roasted with sweet potatoes, carrots, onions and mushrooms. Grapefruit and avocado salad.

Steve, I used to not care about mayonnaise. Then got Hellmans and decided it was great, but our Food Lion had Duke's so we tried it and I won't go back! This is from a girl raised in Pittsburgh with "salad dressing". But moving to Maryland ( 1970) and getting older has changed some of my tastes.
Oh yes, Razz..I am a Heinz ketchup girl...can't take the Pgh. out of me there!
DH made delicious crab cakes and fried clams last night, with the good stuff we got from the fish market. The fried clams were a first attempt and a very successful one!
Sloppy joes today. With all the purging I have only cooked about one meal a week.

I discover a bag of roasted eggplant in the back of the freezer and made baba ghanoush for the first time. So baba ghanoush and crackers, then black bean soup and cornbread.
Had my Easter dinner of BBQ pork shoulder, scalloped potatoes, honey squash, peas and garden salad. Ate too many of my homemade hot cross buns to have a dessert as well.
