Saturday was a big substantial greek salad, with tons of veggies, tons of feta, some tuna and olives.
Sunday was chili that bf made a face about when he heard of it, as it combined turkey and buffalo meat (plus beans) which I somehow thought was somehow a good idea, to not even decide on which meat to use but use both. I might not do that again, but it was actually pretty tasty though, with homemade guacamole.
We bought some tomatoes at the farmers market Saturday, so will have BLT salads for supper.
A romaine salad with Javanese dressing, tomatoes, garlic, and green onions. Iced coffee with cashew milk and protein powder.
Chicken tossed salad and an orange. I had sweet treats in the afternoon so had to compensate.
A cheesestick? Just not very hungry.
I've cooked every single fresh veg in the fridge. I get on a plane tomorrow. Hubster has 3 meals of white turnips/greens and 2 meals of bokchoy/romaine. So he's set till Sunday. Fresh asparagus to saute tomorrow night for dinner. 2 bunches of kale sauted down and put in the freezer. I'll vacuum it tomorrow morning before I leave.
CSA has been on 4 weeks. This is the 4th vacuum sealed meal of greens in the freezer for winter. Wohoo!!!!

Today/tonight will be something with chicken. Haven't worked out the rest of the menu yet - lol.
Eggplant pizzas.
Cold noodle salad with vegetables, chicken and peanut dressing
I slice an eggplant on the round about an inch or so thick (your choice), olive oil on both sides and put on a sheet pan. Put in ~400 degree oven and cook about 10-15 minutes (depends on thickness and I like the bottom to get a little brown). Remove from oven and turn each piece over, apply sauce, parmesan cheese, mozzarella cheese, and whatever other toppings you may want. Put back in oven until cheese is melted. The eggplant DOES get soft!!! Some people don't like that consistency, but we like it.
It's funny, one summer my dad went on an eggplant cooking kick because his mother used to make eggplant, and he ended up giving up, and saying, "I might as well be cooking cardboard."
But we ate a lot of eggplant that summer.
Finally tried the cauliflower pizza crust recipe... eh. LOL. It was somewhat labor-intensive and timely. The crust did NOT crisp up the way I thought the recipe said it would. But it actually tastes decent. Not sure I'll try it again, though.
We had a big shrimp salad.
Today will be chicken in gravy, with roasted cauliflower and a rice/quinoa combo.
We will probably have another big salad with the leftover grilled salmon from Saturday night.
I'm on the "too damn hot to cook/eat plan."
I admit to replenishing my sodium stores with jalapeno kettle chips. I forgot extra salt yesterday and was rewarded with a nasty foot cramp mid-sleep.
Well, my mushroom patties did not hold form, so the mix is in the oven as a... hmmm... mushroom sloppy joes (minus sauce)? Anyway, will still be able to be served, loose, on rolls and should still taste as good.
How did you make them? Reason I ask: my husband is vegetarian and I make him mushroom "meatloaf" as individual servings in a muffin tin. When I use panko, it doesn't seem to hold together very well (certainly not without adding eggs) but when I use fresh bread ground up in the food processor, it holds together much better even without adding egg.Quote:

I wonder if it is the moisture and starch in the bread that helps? Interesting. Today's problem was more sticking to the pan not being able to flip them - they just came apart in the effort and I gave up easily. LOL.
I dice the mushrooms and saute them. Drain out as much liquid as I can (easily, no big effort here - lol), add an egg, some bread crumbs or wheat germ or whatever I can, along with some shredded cheese. I either cook them right away if I have time or put in the fridge. Don't see that doing one or the other makes a difference.
How do you do the mushroom "meatloaf"?
I am having 3 people for dinner tonight and am making lasagna. I used my homemade spaghetti sauce.

I omit the walnuts just to make it simpler. Basically fresh bread and uncooked mushrooms whirred in a food processor, with onions, garlic and Italian dried herbs for seasoning. Plop this into muffin tin compartments and bake at 350 for 1/2 hour or so. I usually have side by side pans of hamburger meatloaf and mushroom "meatloaf", then freeze the extra servings for a quick dinner.

Leftover hamburger with salad.
Because a thunderstorm was forecast, I had bbq'd some burgers and then kept them warm in a beef broth made from Better than Bouillon. That worked out well, kept the burgers moist and flavourful for the group of friends coming to celebrate our July 1st. It was a potluck, the thunderstorm held off so we could sit outside and enjoy the first gathering this year.
Happystuff, I tried your eggplant pizzas recipe using my homemade salsa as the sauce, some pepper and salt plus parmesan sprinkle and topped with mozzarella cheese. It is soft but tasty. I like eggplant so am exploring new recipes for this veg. Glad I tried it and will make it again with other toppings as it is so easy. I want to try freezing the leftovers as the final test of any recipe for me.
Sliced turkey and truffle cheese, with my customary mason jar full of cold mocha.
Pasta with (freezer) ratatouille and a little precooked/frozen meat! Shave a bit of Parm on top and oh yum!
Last night was Taco salad. Cooked/seasoned meat from the freezer. Easy peasy and no heat.
On my own... DH in the hospital recovering from emergency surgery he had on the 4th of July (he's OK--recovering as expected). I had a good lunch at the hospital, so I'll probably do a grilled cheese or a salad.
Salad greens:
arugula thinnings from the garden,
kale from the garden,
rosie (purple) romaine and Lalique lettuce from the hydroponic setup in the basement, and
a few wild sunflower sprouts.
I like to toss this sort of salad with olive oil and vinegar.

This morning I had a hard-boiled egg. I went to put cumin powder on it which I often do, but I accidentally used Penzey's sweet curry powder, and it was the most delicious hard-boiled egg I ever tasted! So I tried some on my potato salad at lunch and yum! Now I want to put sweet curry powder on all of the things!
Tonight is waffles, eggs, and sausage muffins. Last night was BBQ bacon and cheese stuffed pork chops with mixed veggies and apple sauce. Honestly, I could tell you what's for dinner for the rest of the month because I meal plan for the entire month because I could never decide what's for dinner on the spot. The only hiccup is when we do "take out" and I guess luckily, there aren't many choices available to us so the only question is "do we want pizza, chicken, burgers, or tacos?"
